Orange Whole Wheat Challah French Toast


1 cup 1% milk
2 large eggs, preferably organic
1/2 teaspoon vanilla extract
Pinch of salt*
1 teaspoon freshly grated orange zest
Butter
Whole wheat challah, cut into 1-inch slices

In a baking dish or pie plate, whisk together the milk, eggs, vanilla, salt, and orange zest.  Melt the butter in the grill pan over medium heat.  Working in batches, soak the slices of challah in the milk-and-egg mixture for 30 seconds per side.

Place the slices of challah in the grill pan.  Cook for 2 minutes.  Flip the bread over and cook for an addition 1.5-2 minutes, or until golden brown.  Remove from the grill pan and serve warm with a drizzle of maple syrup or dusted with powdered sugar.

* The pinch of salt helps bring out the flavor of the vanilla. Don't omit it!
