Barbecue Chicken Pizza


INGREDIENTS
  • 1 12-inch pre-baked pizza crust
  • 1 cup spicy barbecue sauce
  • 2 boneless/skinless chicken breast halves
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup fresh cilantro, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup red onion, chopped
  • 2 cups shredded Mexican blend cheese
  • Kosher salt, to taste
  • Black pepper, to taste

INSTRUCTIONS
  1. Preheat oven to 350°F.

  2. Place each chicken breast half on a square piece of aluminum foil. Season both sides with salt and pepper. Create sealed packets around the chicken. Bake for 1 hour. Allow to cool and cube.

  3. Place pizza crust on a baking sheet. Toss cubed chicken in barbecue sauce and spread on the crust.

  4. Heat olive oil in a skillet over medium heat. Saute the green peppers and red onions until tender to personal preference. Sprinkle cooked peppers and onions on top of the chicken.

  5. Sprinkle chopped cilantro on top of the peppers, onions, and chicken. Top everything with the shredded cheese.

  6. Bake for 15 minutes, or until the cheese is melted and bubbly. Allow to rest at least 5 minutes before slicing and serving.
