INGREDIENTS
- 1 12-inch pre-baked pizza crust
- 1 cup spicy barbecue sauce
- 2 boneless/skinless chicken breast halves
- 1 tablespoon extra-virgin olive oil
- 1/2 cup fresh cilantro, chopped
- 1 cup green bell pepper, chopped
- 1 cup red onion, chopped
- 2 cups shredded Mexican blend cheese
- Kosher salt, to taste
- Black pepper, to taste
INSTRUCTIONS
- Preheat oven to 350°F.
- Place each chicken breast half on a square piece of aluminum foil. Season both sides with salt and pepper. Create sealed packets around the chicken. Bake for 1 hour. Allow to cool and cube.
- Place pizza crust on a baking sheet. Toss cubed chicken in barbecue sauce and spread on the crust.
- Heat olive oil in a skillet over medium heat. Saute the green peppers and red onions until tender to personal preference. Sprinkle cooked peppers and onions on top of the chicken.
- Sprinkle chopped cilantro on top of the peppers, onions, and chicken. Top everything with the shredded cheese.
- Bake for 15 minutes, or until the cheese is melted and bubbly. Allow to rest at least 5 minutes before slicing and serving.
