Serves 4 320gr (11oz) spaghetti 20 large shrimp, shelled and deveined 2 cloves garlic, sliced thinly pinch of pepperoncino or hot pepper flakes (optional) 4 tbsp extra virgin olive oil 4 tbsp white wine 2 tbsp chopped parsley Cook spaghetti according to package directions. While the pasta is cooking heat olive oil, garlic and pepperoncino or hot pepper flakes in a non-stick skillet over medium heat. When garlic is fragrant add shrimp and cook until golden brown on one side then add white wine to the pan, flip shrimp to cook on the other side and remove from heat immediately. Cover skillet and allow the residual heat of the pan to finish cooking the shrimp. When the pasta is cooked, drain and add it directly to the skillet containing the shrimp. Add chopped parsley and toss. Serve immediately. |
