Cover beans with plenty of water and cook over medium heat until the beans are soft. Cut sausage into bite size pieces. Chop onion, pepper and salt to taste, lower heat and cook several hours until beans cook down and are fairly thick. Serve over cooked rice. . Appreciation Over the years the debt owed to the diocese for the cost of the new church had grown close to $2 million, with accrued interest. In the great jubilee year of 2000 Bishop Bernard Schmitt forgave the entire debt!
Our history, of course, is much more than buildings and finances, but this glance at our "bricks and mortar" history helps us to appreciate the purpose of this cook book in which it is to be published.
The life of our parish has continued to expand in many new ministries and activities and we have discerned our need of a new social hall. As the only Catholic parish for Jackson County, we serve a large and growing population that is scattered over a wide area. We need a place to come together for our own parishioners and for many events to which we can invite our neighbors from the county. The proceeds from the sale of this cook-book will help us to fund our goal of a new hall and we thank you, the reader, for your contribution to our ministry that we carry out in the name of Jesus Christ. We hope this book will enable many households to enjoy nutritious and festive meals in good health. As our benefactors, you are remembered in our prayers for your well-being in this life and in the life to come.
