New Mexico is a state full of amazing and beautiful southwestern pleasures. It lives up to the name "Land of Enchantment".  You cant beat the beautiful sunsets of New Mexico.  If your looking to relocate  or just to visit, New Mexico has something for everyone.  The different climates that exist and rich culture provides many choices for anyone looking for adventure. For the outdoor enthusiast there are a wide range of activities, such as camping, fishing, hiking, and in the winter there is skiing, and snow boarding just to name a few. If your looking for an artistic tone to your vacation, New Mexico is home to many creative artists, it has a multitude of art galleries that will amaze you.  Casinos are available to satisfy your gambling bug, with a variety of machines to choose from. All this exists just within miles of each other. In the most southern part of New Mexico there is a small city called Alamogordo, New Mexico. Which is also home to Holloman Air Force Base. Alot of our military people have chosen to retire here. Just imagine, in one  adventurous day you can be enjoying the warmth and beauty of the desert with views of the mountain ranges lining the horizon. Taking in the ambiance of one of this cities fine mexican restaruants. And then, depending on the season just about thirty minutes to an hour away you can be playing in the snow  or enjoying one of three casinos in the area. The Inn of the Mountain Gods resort 

and The Travel Center, both are located just outside of the beautiful mountain community of Ruidoso, New Mexico.  Ruidoso is a spread out widely among the hills of the Sacramento mountains with wonderful little gift shops, art galleries and cabins  available to rent.

It is also home to the best horse racing around with Billy the Kid Casino. If you prefer a day of family fun in the sun, you have to visit White Sands National Monument. Large dunes of solid white sands as far as the eye can see. A getaway for two or family outings, you cant beat New mexico.  Its an enjoyable experience that will bring wonderful memories.

One of the best Southwest dishes is a Mexican dish called "Red Enchaladas"

INGREDIENTS

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon minced onion

1/2 teaspoon dried oregano

2 1/2 teaspoons chili powder

1/2 teaspoon dried basil

1/8 teaspoon ground black pepper

1/8 teaspoon salt

1/4 teaspoon ground cumin

1 teaspoon dried parsley

 1/4 cup salsa

1 (6 ounce) can tomato sauce

1 1/2 cups water

 DIRECTIONS

Heat the oil in a large saucepan over medium heat. Add the garlic and saute for 1 to 2 minutes. Add the onion, oregano, chili powder, basil, ground black pepper, salt, cumin, parsley, salsa and tomato sauce. Mix together and then stir in the water. Bring to a boil, reduce heat to low and simmer for 15 to 20 minutes. Once the sauce has been made, fry tortillas to soften, or for a less fat version dip the tortillas into the sauce, this will be tricky and messy, use a spatula to remove the tortilla. You can stack the tortillas on top of each other,layering grated cheese of your choice in each layer. Or place the cheese in the middle of the tortilla and roll the tortilla.
