Also, different days will have different varieties of produce and we will do our best to stay as accurate to each deliver days as possible. We continue to use organically grown produce. celery slices onion or leek carrot, thinly sliced aromatics (a few sprigs parsley, thyme and a bay leaf, tied together) salt butter chopped parsley or celery leaves |
Remove leafy ends of the celery and peel the large outer ribs. cut all the ribs into 3- to 4- inch lengths. Put the leek, carrot, aromatics, 1/4 teaspoon salt, 1 tablespoon of the butter, and 3 cups water in a wide skillet. Bring to a boil, add the celery, cover and lower the heat to simmer until tender when pierced with a knife, about 30 minutes. Arrange the celery on a platter and strain the liquid into a saucepan. Boil until 1/2 cup remains, then whisk in the remaining butter to make a little sauce. Pour it over the celery and garnish with chopped parsley and celery leaves.
Spinach and Celery Salad with Lemon Vinaigrette Bon Appétit | June 2006
Asiago frico — easy-to-make crispy cheese wafers — top this salad Makes 6 servings.
4 large celery stalks, very thinly sliced on diagonal
6 ounces baby spinach leaves (about 10 cups loosely packed)
1/4 cup extra-virgin olive oil
3 tablespoons fresh Meyer lemon juice or regular lemon juice
Asiago-Pepper Frico
preparation
Combine celery and spinach in large bowl. Drizzle olive oil and lemon
juice over; sprinkle generously with salt and pepper and toss to coat.
Divide among 6 plates. Top each with 2 Asiago-Pepper Frico.
Asiago Pepper Frico Bon Appétit | June 2006
For these crisp cheese wafers, buy a six-ounce container of shredded Asiago cheese or a blend of Parmesan, Romano, and Asiago Makes 12.
1 cup (packed) shredded Asiago cheese or Parmesan, Romano, and Asiago cheese blend (about 4 ounces)
1/2 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
Preheat oven to 350°F. Line 2 large baking sheets with parchment
paper. Mix cheese, black pepper, and cayenne in small bowl. Spoon cheese
mixture by generous tablespoonfuls in 6 mounds on each prepared baking
sheet, spacing 3 inches apart. Using fingers, spread each mound evenly
to 2 1/2-inch round. Bake frico until deep golden and crisp, about 12
minutes. Remove from oven. Slide parchment with frico onto work surface
and cool 5 minutes. Slide thin metal spatula under frico to loosen. Cool
frico completely on parchment. Frico can be prepared 1 day ahead. Store
airtight in single layer at room temperature.

Sweet and Sour Celery
from Asparagus to Zucchini: A Guide to Farm-Fresh Seasonal Produce by the Madison Area CSA Coalition
1 bunch celery, leaves removed, stalks cut on the diagonal into 1-inch slices
1 Tbs. sugar
1/4 tsp. salt
1/8 tsp. cayenne pepper
1/4 cup cider vinegar
1 tbs. finely chopped sweet red pepper
Pour enough water into a large skillet to fill about 1/4-inch deep.
Add celery, sugar, salt and cayenne pepper. Cover, leaving the lid
slightly ajar, and bring to boil. Cook until celery is tender and liquid
has evaporated, about 5 minutes. Remove from heat; stir in the vinegar.
Transfer to a serving dish and scatter sweet pepper over the top. Serve
immediately. Four servings.

Dear subscribers...we heard your cry..."No more cabbage!" There will be no cabbage this week and we are excited to highlight one of our farmer partners who are helping us fill your boxes with delicious fruits and veggies:

This farm has been around since 1907 and organic since 1989. It is located near the Sespe Creek, which is one of the last wild rivers in Southern California. They grow citrus, lemons, grapefruit and blood oranges at different times throughout the year.

News from previous weeks:
It is winter and we have just moved. SCF Coop is finally farming on land that it's sister organization the South Central Farmers' Health and Education Fund (SCFHEF) owns in Buttonwillow, CA. A percentage of all proceeds made from SCF Coop sales will go to support SCFHEF's mission to support the development of rural and urban farming for minority farmers and families, as well as, health and nutrition education for youth.
During this transition we are learning all about this new landscape that brings a host of different opportunities and challenges, such as, great dark soil, access to well water, planting of fruit trees...birds that like to eat our seeds, new irrigation systems, untilled earth and more. We are excited for the new spring crops that are planted and on their way. We also recognize that the combination of the winter cold and the process of starting a new farm also can mean slow and limited production of the veggies. During this time, we will be supplementing our CSA boxes with produce from other local farms to make sure that you continue to receive full quality CSA boxes with a variety of veggies for your consumption. Veggie of the Week

Navel Oranges
Nutrition: Navel Oranges are Fat-free, Sodium-free, High in fiber, High in vitamin C, Cholesterol-free.
Storage: Oranges can be kept out at room temperature for three or four days with little problem. Refrigerate them in a plastic bag or in the crisper drawer, and they'll keep well for one to two weeks.
More Info: California navel oranges are considered by many to be the best oranges in the world for eating out of hand. They have a meaty flesh, their thick rinds are easy to peel, the segments separate easily, and they have no seeds. All navel oranges have a navel at the blossom end - an opening with a convoluted interior that looks, well, like a navel. Some have a very small navel; others have a larger one.
Recipe of the Week
Ingredients
- 1 cup couscous
- 1 cup shredded rotisserie chicken
- 1/3 cup pistachios, toasted and coarsely chopped
- 1 navel orange, peeled and coarsely chopped
- 2 tablespoons chopped fresh mint leaves
- 2 teaspoons extra-virgin olive oil
- 2 teaspoons red-wine vinegar
- coarse salt and ground pepper
Directions
- In a medium bowl, pour 1 cup boiling water over couscous. Cover and let sit until tender, 5 minutes. Fluff with a fork. In another medium bowl, combine chicken, pistachios, orange, mint, oil and vinegar. Season with salt and pepper. Toss couscous with chicken mixture.

Veggie of the Week

Purple Kale
Nutrition: This
food is low in Saturated Fat, and very low in Cholesterol. It is also a
good source of Dietary Fiber, Protein, Thiamin, Riboflavin, Folate,
Iron, Magnesium and Phosphorus, and a very good source of Vitamin A,
Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and
Manganese.
Storage: To store, place kale in a plastic storage bag removing as much of the air from the bag as possible. Store in the refrigerator where it will keep for 5 days. The longer it is stored, the more bitter its flavor becomes. Do not wash kale before storing because exposure to water encourages spoilage.
More Info: Kale freezes well and actually tastes sweeter and more flavourful after being exposed to a frost.
Recipe of the Week
This Creamy Parmigiano Kale and Cabbage recipe turns the healthy vegetables kale and cabbage into a real treat. Cheese and cream are added to this recipe in fairly small amounts, so you get lots of rich flavor without making the dish too heavy or losing all the health benefits of kale and cabbage. It's great served as a side dish with any type of meat.
Parmigiano-Reggiano isn't the only cheese you can use in this recipe. Try Grano Padano, Pecorino Romano, or Cheddar.
Creamy Parmigiano Kale and Cabbage recipe serves 4
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Ingredients:
- 1 bunch kale (about 12 stems), leaves chopped and stems removed
- 1 pound white cabbage, shredded
- 1/2 cup cream
- 1/2 - 1 cup grated Parmigiano-Reggiano cheese
Preparation:
Put chopped kale in boiling water for 5-6 minutes until leaves are tender. Drain.
In a few tablespoons of oil or butter, saute cabbage on medium heat until it softens, about five minutes.
Add kale and saute a few minutes more. Add cream and let simmer 3-5 minutes, stirring occasionally, so most of the cream is soaked up by the vegetables. Add cheese, let melt slightly, and remove from heat. Salt and pepper to taste.

Veggie of the Week

Parsley
Nutrition: This food is low in Saturated Fat, and very low in Cholesterol. It is
also a good source of Protein, Vitamin E (Alpha Tocopherol), Thiamin,
Riboflavin, Niacin, Vitamin B6, Pantothenic Acid, Phosphorus and Zinc,
and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin
K, Folate, Calcium, Iron, Magnesium, Potassium, Copper and Manganese.
Storage: How to Store Parsley, Cilantro, and Other Fresh Herbs
Method
1 Snip off the bottom of the stems.
2 Make sure the leaves are completely dry. Better to hold off rinsing them until you're about to use them.
3 Fill a jar or a water glass partially with water and place the stem ends of the herbs into the water in the jar.
4 If you are storing the herbs in the refrigerator, cover
loosely with a plastic bag. Cilantro loves cool temperatures and should
be stored in the refrigerator. Parsley can be stored at room
temperature or in the refrigerator. According to Harold McGee, basil is ideally stored at room temperature and not in the refrigerator, because it is susceptible to damage from cold.
5 Change the water after several days if the water starts to discolor.
Fresh parsley, cilantro, basil, and other fresh herbs can last up to 2 weeks or longer when stored this way.
More Info: Parsley is the world’s most popular herb. It derives its name from the
Greek word meaning “rock celery” (parsley is a relative to celery). It
is a biennial plant that will return to the garden year after year once
it is established.
Recipe of the Week
Chimichurri Recipe

- 1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems
- 3-4 garlic cloves
- 2 Tbsps fresh oregano leaves (can sub 2 teaspoons dried oregano)
- 1/2 cup olive oil
- 2 Tbsp red or white wine vinegar
- 1 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes
Method
1 Finely chop the parsley, fresh oregano, and garlic (or process in a food processor several pulses). Place in a small bowl.
2 Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a day or two.
Serves 4.

Veggie of the Week

Cabbage
Nutrition: In
its raw state, cabbage contains iron, calcium, and potassium. High
marks are given for its vitamin C content. Cabbage is also high in
vitamins B1, B2, and B3.
Storage: Wrapped
in a plastic bag and stored in the refrigerator, cabbage will keep up
to three weeks. However, for its best flavor and nutrition, serve
cabbage at its freshest.
More Info: Cabbage
is in the family of vegetables known as cruciferous, a name derived
from their cross shaped flowers. All cabbages are cruciferous including
broccoli, Brussels sprouts, cauliflower, kale, and collards.

Recipe of the Week

1 medium head green cabbage, about 2 pounds
1 large yellow onion, sliced into rough 1/3-inch slices
1 large carrot, sliced into ¼-inch rounds
¼ cup good-quality chicken stock, or water
¼ cup extra virgin olive oil
Coarse salt and freshly ground black pepper, to taste
1/8 tsp crushed red pepper flakes
1 egg, poached according to the directions here
Maldon salt, or fleur de sel, to taste
Preheat the oven to 325 degrees Fahrenheit, and position a rack in the middle of the oven.
Peel off and discard from the cabbage any bruised or messy outer leaves. Give the cabbage a quick rinse under cool water, and dry it lightly. Cut it into 8 wedges, and trim away some of the woody core, leaving enough to hold each wedge intact. Arrange the wedges in a 9 x 13 baking dish. They may overlap a little, but you want them to lie in a single—if crowded—layer. If they don’t fit nicely into the dish, remove one wedge and set it aside for later use in a quick sauté, salad, or soup.
Scatter the onion and carrot over the cabbage, and pour the stock and oil over the whole mess. Season with a couple pinches of coarse salt, a couple grinds of the pepper mill, and the red pepper flakes. Cover the dish tightly with foil, and slide it into the oven. Cook the vegetables for 1 hour; then remove the dish from the oven and gently turn the cabbage wedges. If the dish seems at all dry, add a couple tablespoons of water. Cover the dish, and return it to the oven to cook until the vegetables are very tender, about an hour more.
When the cabbage is completely tender, remove the foil over the baking dish, turn the oven up to 400 degrees, and continue cooking until the vegetables begin to brown lightly on their edges, another 15 or so minutes.
Serve warm, topped with a poached egg and sprinkled with plenty of good, flaky Maldon salt and freshly ground black pepper.

Veggie of the Week

Celery
Nutrition: This
food is low in Saturated Fat, and very low in Cholesterol. It is also a
good source of Riboflavin, Vitamin B6, Pantothenic Acid, Calcium,
Magnesium and Phosphorus, and a very good source of Dietary Fiber,
Vitamin A, Vitamin C, Vitamin K, Folate, Potassium and Manganese.
Storage: Refrigerate celery in a plastic bag for a week or more. Some people suggest wrapping in aluminum foil.

is a biennial vegetable plant that belongs to the Umbelliferae family
whose other members include carrots, fennel, parsley and dill. While
most people associate celery with its prized stalks, the leaves, roots
and seeds can also be used as a food and seasoning as well as a natural
medicinal remedy.
Recipe of the Week
BRAISED CELERY
| 1 head several 1 3 tbsp. | celery slices onion or leek carrot, thinly sliced aromatics (a few sprigs parsley, thyme and a bay leaf, tied together) salt butter chopped parsley or celery leaves |
Remove leafy ends of the celery and peel the large outer
ribs. cut all the ribs into 3- to 4- inch lengths. Put the leek,
carrot, aromatics, 1/4 teaspoon salt, 1 tablespoon of the butter, and 3
cups water in a wide skillet. Bring to a boil, add the celery, cover and
lower the heat to simmer until tender when pierced with a knife, about
30 minutes. Arrange the celery on a platter and strain the liquid into a
saucepan. Boil until 1/2 cup remains, then whisk in the remaining
butter to make a little sauce. Pour it over the celery and garnish with
chopped parsley and celery leaves.
Other Ideas...
Add chopped celery to your favorite tuna fish or chicken salad recipe.
Enjoy the delicious tradition of eating peanut butter on celery stalks.
Use celery leaves in salads.
Braise chopped celery, radicchio and onions and serve topped with walnuts and your favorite soft cheese.
Next time you are making fresh squeezed carrot juice give it a unique taste dimension by adding some celery to it.
Add celery leaves and sliced celery stalks to soups, stews, casseroles, and healthy stir fries.

Brie, Apple, and Arugula Quesadillas
Fuji apples offer a crisp counterpoint to the rich, creamy cheese. Substitute Honeycrisp or Ambrosia apples, if you prefer.

- YIELD: 6 servings (serving size: 2 wedges)
- COURSE: Appetizers
Ingredients
- 1 tablespoon Dijon mustard
- 2 teaspoons apple cider
- 3 (10-inch) flour tortillas
- 6 ounces Brie cheese, rind removed and cut into 1/4-inch-thick slices, divided
- 1 Fuji apple, cored and cut into 1/4-inch-thick slices (about 1/2 pound), divided
- 3 cups arugula, divided
- 3/4 teaspoon freshly ground black pepper, divided
Preparation
1. Combine mustard and cider in a small bowl; stir well.
2. Heat a large nonstick skillet over medium heat. Spread each tortilla with about 1 1/2 teaspoons mustard mixture. Place 1 tortilla, mustard side up, in pan. Arrange one-third of cheese slices over half of tortilla; cook 1 minute or until cheese begins to melt. Arrange one-third of apple slices over cheese; top with 1 cup arugula. Sprinkle with 1/4 teaspoon pepper. Fold tortilla in half; press gently with a spatula. Cook 2 minutes on each side or until golden brown. Remove from pan. Repeat procedure twice with remaining 2 tortillas, cheese, apple slices, 2 cups arugula, and 1/2 teaspoon pepper. Cut each quesadilla into 4 wedges.
Wine match: Gewürztraminer. For a flavorful apple entrée like these quesadillas, try a French twist with an Alsatian gewürz. The barely off-dry 2009 Helfrich "Noble Tier" Gewürztraminer (Vin D'Alsace; $15) has crisp apple and melon flavors, plus some flamboyant floral (rose and gardenia) and spice components that work beautifully with the aromatic cheese and the spicy arugula. --Sara Schneider

Veggie of the Week

Kohlrabi
Nutrition:
Kohlrabi possesses many attributes worth notice: Low in calories, only
19 for a half cup raw, sliced; High in dietary fiber, 2.5 grams for
one-half cup; Potassium content peaks at 245 grams for one-half cup;
Vitamin content for that same one-half cup includes 25 I.U. vitamin A,
43.4 mg.
vitamin C, 11.3 mcg folic acid, and 16.8 mg. calcium.
Storage: With the leaf stems removed, kohlrabi can be stored in
the refrigerator for several weeks. Storage life can be extended if
kohlrabies are placed in sealed plastic bags.
More Info: Kohlrabi is a member of the cabbage family grown for its swollen,
turnip-shaped portion of the stem which rests on the ground. The edible
portion can be white, purple or green with a creamy white interior. They are
eaten raw in salads or can be cooked like a turnip.

A Variety of Dishes...

RAW
Remove the stems by pulling or cutting them off the kohlrabi globe.
Stems and leaves can be chopped and included in a tossed salad. Their
flavor is mild and takes well to salad dressing. If the kohlrabi is
small, there is no need to peel it, however you may want to cut off the
tough base end. If you've purchased large kohlrabi, peel it and slice
off the tough woody base before slicing or dicing.
Slice or cut into julienne and include on a relish tray with dips.
Coarsely grate kohlrabi into a tossed salad. Because it is mild, succulent and porous, it absorbs the flavor of a mild or pungent salad dressing quite well.
Dice kohlrabi and combine with your favorite vegetables and dressing for a chopped salad with delightful crispness.
Slice kohlrabi, wrap in plastic, and pack in your brown bag lunch for a crunchy snack.
Chop and include as one of the ingredients in a raw soup.
STEAMED
Slice kohlrabi or cut into bite-sized pieces and put into a saucepan
with 1/2 inch (1 cm) of water. Add a dash of salt, cover and bring to a
boil over high heat. Turn heat down to low and steam for 5 to 7 minutes.
Leaves can be steamed lightly just as you would do spinach.
BARBECUED
Slice or chop kohlrabi and toss in a bowl with a little extra virgin
olive oil. Sprinkle with a dash of salt, and wrap in aluminum foil
(shiny side inside). Place on the grill and cook for about 10 to 12
minutes.
STIR FRIED Dice or chop into bite-size pieces and stir fry 5 to 7 minutes in a little extra virgin olive oil with a clove or two of minced garlic and a dash of salt.
Yield: 4 servings
- Combine all the ingredients, except the black sesame seeds and green onions, in a large bowl and toss well to distribute the seasonings evenly.
- Transfer to an attractive serving bowl or platter and garnish the top with the black sesame seeds and minced green onions.
- This salad is best if made several hours ahead to allow the dressing to penetrate the vegetables.
- Serve as a salad course or a side dish.

Notes from the Farm and End of the Year Support
In the midst of all the joyous holiday festivities and relveries, December can be a tough time for farmers. While it comes with a few days of needed time off, as subscribers begin to travel or have shifting schedules that prevent their normal dose of produce, income often goes down for small scale farmers. Like many of you SCFC is definitely feeling the financial pinch this year. It has been a whirlwind of a year! From delicious melons, to crop loss, to tasty kale, to moving from Bakersfield to Buttonwillow. We are definitely looking forward to rooting ourselves down in our new farm home, but also feel the real struggle of cultivating new land and the financial drain the move was.

Notes from the Farm
In the midst of all the joyous holiday festivities and relveries, December can be a tough time for farmers. While it comes with a few days of needed time off, as families begin to travel or have shifting schedules that prevent their normal dose of produce, income often goes down for small scale farmers. Like many of you SCFC is definitely feeling the financial pinch this year. It has been a whirlwind of delicious melons, to crop loss, to tasty kale, to moving from Bakersfield to Buttonwillow. We are definitely looking forward to rooting ourselves down in our new farm home, but also feel the real struggle of cultivating new land and the financial drain the move was.

Turnips
Nutrition: This food is low in Saturated Fat, and very low in Cholesterol. It is
also a good source of Riboflavin, Magnesium, Potassium and Copper, and a
very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C,
Vitamin E (Alpha Tocopherol), Vitamin K, Folate, Calcium, Iron and
Manganese.
Storage: Store
turnips in the refrigerator in a plastic bag for only a few days since
they get bitter with prolonged storage. You can also eat the greens!
Store them in a separate plastic bag from the roots.
More Info: In Iran, boiled turnip roots (with salt) are a common household remedy for fever.

Blue Kale
Nutrition: This food is low in Saturated Fat, and very low in Cholesterol. It is

Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper

Storage: Store kale in a plastic bag in the coldest part of the fridge for 3-5 days.
More Info: Kale freezes well. In fact, it actually tastes sweeter and more flavorful afterwards.
To freeze for a long period, blanch till the color turns bright in hot boiling water for 2 minutes.
Drain in a colander and run cold water over the top. Remove any excess water from the
surface (setting it out to dry works great) and place in freezer bags, or
containers. Then when needed, thaw to room temperature, removing only as much veggie as you require.
Curly kale is used in Denmark and Halland, Sweden, to make (grøn-)langkål, an obligatory dish on the julbord in the region, and is commonly served together with the Christmas ham (Sweden, Halland).

Happy Thanksgiving to all our subscribers! We hope you have a joyous holiday filled with family, friends, and lots of delicious veggies. Please note the below updates for the CSA delivery schedules during this winter season:

Here at the farm we are noticing the shift in seasons as our watermelon and squash harvests slowly decline and the root veggies and delicious greens peek their sprouts out of the ground.
As we are experiencing this transformation on the farm, you too are probably changing your summer/fall rhythms and are planning your lives just a little differently for the upcoming season. Below is our Winter CSA schedule, which we hope will work best with the varying holidays and school calendars these next two months. Please stay tuned for updates

Preserve Urban Green Space Update
For those of you who have been tracking our farmers' campaign to preserve green space in South Central, Los Angeles and the restoration of urban farming at 41st and Alameda, below are links to updates from Tuesday's City Council meeting. Disappointingly, the entire council voted unanimously to allow the developer to move forward in the plans to build a large garment factory distribution warehouse.

Castilla Pumpkin
Nutrition: Castilla Pumpkins are low in Saturated Fat, and very low in Cholesterol and
Sodium. It is also a good source of Vitamin E (Alpha Tocopherol),
Thiamin, Niacin, Vitamin B6, Folate, Iron, Magnesium and Phosphorus, and
a very good source of Dietary Fiber, Vitamin A, Vitamin C, Riboflavin,
Potassium, Copper and Manganese
Storage: Store in a cool, dry place, such as an attic or spare room (root cellars
are too damp) at 45 to 60 degrees F. up to a month, or refrigerate for
up to three months.
Leftover cooked pumpkin can be frozen up to 16 months or canned.
More Info: In
Mexico, pieces of calabaza de Castilla are sweetened with cane sugar
and served on Día de los Muertos, or Day of the Dead.These pumpkins can
be difficult to cut when raw. Cook for about 10-15 minutes and then cut
as desired.

garment factory warehouse to be built on original South Central
Farm...The South Central Farmers along with other organizations have
proposed an alternative plan for development that will preserve green
space, park land, farm land, and community space.

Prior
to farming in Bakersfield, the South Central Farmers tended to the
largest urban farm in the country just south east of downtown Los
Angeles. In 2006 the farmers were kicked off the land and it was
bulldozed to make way for development. Due to environmental reasons, the
owner has been unable to sell the land for development and it sits
fallow. The South Central Farmers and their supporters have diligently
worked over the last five years to keep any development off the land
that does not support the health and well being of the local community.
This past summer, the owner went into escrow with four garment
companies (Poetry, Impact, Miss Me, Active) to develop a warehouse and
distribution on the land. In order for this deal to go through, however,
the councilwoman of the district has to ammend a previous lease
agreement with the owner that commits a park/soccer field on the space
as a mitigation to the community for the removal and destruction of the
South Central Farm.

Turnips
Nutrition: This food is low in Saturated Fat, and very low in Cholesterol. It is
also a good source of Riboflavin, Magnesium, Potassium and Copper, and a
very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C,
Vitamin E (Alpha Tocopherol), Vitamin K, Folate, Calcium, Iron and
Manganese.
Storage: If you buy turnips with their greens attached, remove the greens when you get them home. Clean, store, and cook the greens.
Store turnips loosely wrapped in a plastic bag in the crisper of the
fridge or, if you're lucky enough to have one, loose in a root cellar.
Like any root vegetable, they want a cool, dark, dry environment.

Contrary to conventional wisdom, turnips can be eaten raw. Baby turnips
can be cut into wedges and served as crudites with dip or sliced and
added to salads for a crisp, lightly zippy tang. Turnips are more
commonly cooked, however, and lend themselves to a variety of
preparations. They are delicious roasted
(a process that mellows and yet concentrates their sometimes watery
flavor at the same time), mashed, baked, or added to soups or stews. The
"hot" flavor associated with turnips makes them particularly well
suited to mixing and matching with other root vegetables. Add a turnip
or two to your favorite mashed potato recipe, for example, or to a pan
of roast vegetables.

Save Urban Green Space!
Prior
to farming in Bakersfield, the South Central Farmers tended to the
largest urban farm in the country just south east of downtown Los
Angeles. In 2006 the farmers were kicked off the land and it was
bulldozed to make way for development. Due to environmental reasons, the
owner has been unable to sell the land for development and it sits
fallow. The South Central Farmers and their supporters have diligently
worked over the last five years to keep any development off the land
that does not support the health and well being of the local community.
This past summer, the owner went into escrow with four garment
companies (Poetry, Impact, Miss Me, Active) to develop a warehouse and
distribution on the land. In order for this deal to go through, however,
the councilwoman of the district has to ammend a previous lease
agreement with the owner that commits a park/soccer field on the space
as a mitigation to the community for the removal and destruction of the
South Central Farm.

Nutrition: This is a rich source of dietary fiber, minerals, vitamins. The pods contain healthy amounts of vitamin A,
and flavonoid anti-oxidants such as beta carotenes, xanthin and lutein.
The veggies are rich in B-complex group of vitamins like niacin,
vitamin B-6 (pyridoxine), thiamin and pantothenic acid. Okra is a
powerhouse of valuable nutrients. Nearly half of which is soluble fiber
in the form of gums and pectins. Soluble fiber helps to lower serum
cholesterol, reducing the risk of heart disease. The other half is
insoluble fiber which helps to keep the intestinal tract healthy
decreasing the risk of some forms of cancer, especially colorectal
cancer. Nearly 10% of the recommended levels of vitamin B6 and folic
acid are also present in a half cup of cooked okra.
Storage: Refrigerate
unwashed, dry okra pods in the vegetable crisper, loosely wrapped in
perforated plastic bags. Wet pods will quickly mold and become slimy.
Okra will keep for only two or three days. When the ridges and tips of
the pod start to turn dark, use it or lose it. Once it starts to darken,
okra will quickly deteriorate.

Freezing is the best method for long term home storage of okra. Freeze
only young, tender okra. Okra must be blanched before freezing, as with
all vegetables. Unblanched okra will quickly become tough and suffer
huge nutrient, flavor and color loss during freezing. Follow the
procedure outlined below for successful home freezing.

Chili Peppers
(We thought you may want some more support in using these little veggies!)
Nutrition: Fresh chili peppers, red or green, are rich source of vitamin-C. 100 g fresh chilies provide about 143.7 mcg or about 240% of RDA. They
are also good in other antioxidants like vitamin A, and flvonoids like
beta carotene, alpha carotene, lutein, zeaxanthin, and cryptoxanthins.
Chillies contain good amount of minerals like potassium, manganese,
iron, and magnesium. Chillies are also good in B-complex group of
vitamins such as niacin, pyridoxine (vitamin B-6), riboflavin and
thiamin (vitamin B-1).
Storage: Once
at home, should be stored in the refrigerator in a plastic bag where
they will stay fresh for about a week. Dry chillies can be stored at
room temperature in a cool, dark place and in airtight containers for
many months; can be milled to powder using hand mill as and when
required.

co-compounds used in the preparation of ointments, rubs and tinctures
for their astringent, counter-irritant and analgesic properties. These
formulations have been in use in the treatment of arthritic pain, post
herpetic neuropathic pain, sore muscles etc. Scientific studies on
experimental mammals suggest that capsaicin has anti-bacterial,
anti-carcinogenic, analgesic and anti-diabetic properties. It also found
to reduce LDL cholesterol levels in obese persons.

Nutrition: The
bright orange color of pumpkin is a dead giveaway that pumpkin is
loaded with an important antioxidant, beta-carotene. Beta-carotene is
one of the plant carotenoids converted to vitamin A in the body.
Storage: Store pumpkins in a cool, dark place for up to two months.
More Info: The pumpkin is indigenous to North America. Halloween pumpkins are edible and the source of canned pumpkin.

Nutrition: From
a nutritional standpoing they are high in nutrition and low in
calories; one small serving of squash provides the RDA of vitamin A.
Storage: Keep
summer squash in the fridge and handle carefully since damaging the the
fragile skin can make it spoil faster. Some customers like to keep their
squash in plastic bags or breathable containers to protect it.

Notes from the Farm
We are Moving!!!
After several year
s
of working, waiting, and gathering resources, our South Central
Farmers' Cooperative will finally be moving onto land owned by our
sister organization, the South Central Farmers' Health and Education
Fund. In 2010 we celebrated the first drop off water from
the well onto the barren land, and this month we finally planted our
first couple of crops.What does this mean for our CSA subscribers whose committment and support is another piece of our move becoming a reality:
~ SCFC continues to provide quality organic produce to as many families as possible throughout Los Angeles and Kern Counties.
~ We are planting trees! Yes, for all of you who have asked or wondered about fruit and other tree crops, we are in the process of planting various seedlings on the property. You can expect delicious oranges as soon as next year!
~ A percentage of all sales will go to support important community programs in low income areas focused on health, nutrition, local food, urban farming, the creative arts, seed saving and more.
Here are some excerpts from the Bakersfield Californian:
"South Central Farmers, an organic inner-city farming cooperative, has received enough donations to launch a working farm on land it was given in Buttonwillow, and will begin planting and irrigating next week.
The 85 acres of farmland in Buttonwillow, CA did not have a working
well or any other infrastructure when it was donated to the group. South
Central Farmers could not afford the $100,000 cost for a new well so
the land has lain fallow for the last five years, during which the group
sharecropped elsewhere and pursued a fundraising initiative. Ten local
agribusinesses later donated $200,000 worth of labor and equipment."
We cannot begin to express our gratitude to donors, volunteers, and
farmers who made this vision a reality. The support of everyone invloved
reflects the deep hearts and human connection that we all value during
such hard economic times, and we hope each person, business and
organization receives many times the generosity that the South Central
Farmers were touched by these past many years.

Tomatoes
Nutrition: This veggie contains very good levels of vitamin A, and flvonoid anti-oxidants such as alpha and beta carotenes, xanthin and lutein. In addition, they are also good source of antioxidant vitamin-C. Fresh tomato is very rich in potassium. They are also good source of folate, iron, calcium, manganese and other minerals.
Storage: Once
at home, place them at room temperature in cool, dark place. Over
ripened ones can be stored in the refrigerator. Eat them while they are
fresh to obtain full benefits of vitamins and antioxidants.
More Info: Unripe tomatoes can be used to make "chutney" in Indian subcontinent cuisine. Overripe tomatoes can be used to make salsa, tomatoes sauce, and more!

Preserve Urban Green Space..
From 1994 to 2006, the South Central Farmers
maintained the largest urban farm in the country. In 2006 the land was
bulldozed to make
way for a warehouse. Many of the South Central Farmers and their
supporters have continued to fight to reclaim the land back for urban
farming and green space. While farming in Bakersfield to grow the
delicious organic produce provided in your CSA boxes the farmers also
are active politically and socially seeking to strengthen and grow the
urban farming movement by seeking to restore the original South Central
Farm near downtown Los Angeles.
Once again, the restoration of the South Central Farm in Los Angeles is in jeopardy!
The City of Los Angeles has informed us that they are going back on an eight year deal that was a back-room dealt in 2003.
Not only did the community lose the South Central Farm, supposedly
there was a community benefit of 2.6 acres for soccer fields, in the
back room deal that Council Woman Jan Perry cut in 2003. Now we stand
to lose that again because the City and Port of Los Angeles want to take
cash from the developer for the land instead of provide much needed
green space in an alrighty blighted community. If you want to see the

Storage: To
store summer squash, place, unwashed in plastic bags in the crisper
drawer of the refrigerator. Wash the squash just before preparation. As
with most vegetables, water droplets promote decay during storage. The
storage life of summer squash is brief, so use within two to three days.
More Info: Use this squash raw or cooked and it freezes well when sliced or cubed.

Cantaloupe
Nutrition: This
food is low in Saturated Fat and Sodium, and very low in Cholesterol.
It is also a good source of Dietary Fiber, Niacin, Vitamin B6 and
Folate, and a very good source of Vitamin A, Vitamin C and Potassium.
More Info: Good-quality Cantaloupe will have large webbing or netting on the skin, will have yellow/orange coloring and be slightly soft on the stem end (firm elsewhere). They will also have a good cantaloupe smell on the stem end (if it is not too cold), and the scar at the stem end should be a smooth and well-rounded cavity. Finally, you can hear the seeds rattle inside a juicy melon when shaken. Often, melons will have a decidedly bleached side that rested on the soil - this does not affect the quality of the melon.

Summer is officially upon us...it is now finally HOT in Bakersfield.
For this week we are looking at temperatures in the high 90s and low
100s. Our farmers are staying hydrated and working hard to keep the
harvested produce fresh, delicious and ready for your boxes. Some of the
things you will begin to notice in your box now that things are heating
up...
- There are less greens and winter veggies in the box...they don't
like the heat! So enjoy the last bunches of this season's harvest.
- The variety is a little low (are you already tired of squash and
cucumbers). It is getting too hot for a number of our items from the
winter season and we are no longer harvesting them. It is just beginning
to get hot enough for the summer season to grow in. This keeps our
variety pretty much limited to veggies that are happy in this
transitional climate.
- What you can look forward to, trusting that everything planted matures:
- Basil (purple and green) - Early July
- Peppers (New Mexico, Jalepeno, Bell) - Mid July
- Watermelon (Sangria and Crimson Sweet) - Mid July
- Cucumber (Marketmore and Armenian) - Any day now
- Cantaloupe - Mid July

Nutrition: This
food is low in Saturated Fat, and very low in Cholesterol and Sodium.
It is also a good source of Vitamin A, Pantothenic Acid, Magnesium,
Phosphorus and Manganese, and a very good source of Vitamin C, Vitamin K
and Potassium.
Storage: Store in main part of fridge in paper bag or plastic bag.
More Info: The Armenian Cucumber is a type of long, slender fruit which tastes like a cucumber and looks somewhat like a cucumber inside. It is actually a variety of muskmelon (C. melo), a species closely related to the cucumber (C. sativus). The skin is very thin, light green, and bumpless. It has no bitterness and the fruit is almost always used without peeling.

Summer

Marketmore Cucumbers
Nutrition: Cucumbers
are 95% water, which means they do not contain a lot of nutrients.
However, they are low in fat, saturated fat, sodium, cholesterol and
calories. The fresh cucumber is a very good source of the vitamin
C and the mineral molybdenum. It is also a good source of vitamin A,
potassium, manganese, folate, dietary fiber and magnesium. What you may
not know is that this crisp, refreshing fruit also contains compounds
called sterols, which have been shown to lower cholesterol in animals.
The heaviest concentration of sterols is in the skin of the cucumber, so
you shouldn't remove the peel before eating.
Storage: Unpeeled
cucumbers should be washed in cold water to remove any soil or other
dirt. Cucumbers should be refrigerated in a plastic bag soon after
purchase. They should keep for about a week.

A South-Central garden spot again?
The urban parcel once cultivated by the South Central Farmers is again available, for a price. It's worth pursuing a deal with a foundation to get it growing again.

Once there was a farm in South Los Angeles that sprouted among warehouses and railroad tracks. In the shadow of downtown skyscrapers, avocado trees and beans and tomatillos took root and gave 350 families a bountiful harvest and a gathering place. But the plot of land at 41st and Alameda — estimated at 14 acres — was not the farmers' to keep. Allowed to garden there by the city after it took possession under eminent domain, the land was eventually sold back to a previous owner. The farmers could leave — or buy the property from him for about $16 million.
The 2 1/2-year battle that erupted in 2006 played out like an opera. The South Central Farmers, as the gardeners named themselves, felt betrayed by city politicians. The property owner, Ralph Horowitz, believed — rightly — that he was being unfairly vilified for simply trying to protect his investment. Despite a promise of millions from the Annenberg Foundation, a deal to buy the property and keep the farm going fell through, giving way to the ugly sight of bulldozers plowing crops under. But life went on. Some farmers moved farther south to land that L.A. City Councilwoman Jan Perry helped them find. Others — who kept the South Central Farmers name — moved to land near Bakersfield, where they continue to grow produce that they sell at farmers' markets and in several Whole Foods stores. And some quit farming altogether.

Now, nearly five years later, the property that ignited so much drama sits vacant, awash in wild grasses. But it is for sale, and the South Central Farmers want it back.
Nobody is standing in their way. But nobody is helping them either. Horowitz is asking about $18 million for the property. Perry, the City Council member in whose district the parcel lies, says she would like it to go to the buyer who would bring the greatest number of jobs to people in the immediate area.
Like Perry, we want to see the best use of this large parcel — a rare find — as well. And there's no question that jobs are badly needed in the community. But is someone offering to create a lot of jobs there? As far as we know, in the tortured history of this piece of land over the last 25 years, the most productive use of it was the urban farm that lasted 14 years. No one wins with the land lying empty and fallow.
The South Central Farmers' proposal should at least be heard out. Hardly diplomats, they have alienated a lot of people over the years. But they love the land, and they have a plan that may improve on the erstwhile farm. "The garden will be an educational and cultural center," said Tezozomoc, their most vocal representative, who goes by a single name. He promises that it will be more community-oriented than it was, and that the original farmers will not take plots to garden but will open them to other city residents.
A nonprofit organization or foundation would have to finance the purchase and would essentially own the land. Whether the Annenberg Foundation would get involved again is unclear. The farmers would have to present their request to the foundation anew.
Horowitz, of course, has to act in his best business interest. This may all be moot if he closes an alternative deal on the land. (It's been on the market for a year.)
Meanwhile, Perry — who is running for mayor — should at least meet with the farmers to hear their proposal and consider whether to advocate for them. She says she supports community gardens and has created two wetland areas in her district. That's good. But this piece of land is like no other in her district — a sprawling, flat expanse. Many people were heartened by the presence of the urban farm amid the concrete. Perry herself, in a 2003 letter, hailed the garden as "a vibrant oasis." If a deal with a foundation can be worked out, wouldn't it be good to have something growing there again?

Nutrition: Vitamins B6 and C, riboflavin.
Storage: Refrigerate in a plastic bag for up to a week. When ready to use, wash and trim the ends. No need to peel if young and tender.
More Info: Sauté thin half-moons of zucchini and yellow squash in olive oil and garlic, and serve as a side dish or toss with pasta.Steam peeled squash chunks in a basket, covered, over boiling water, 15-20 minutes. Boil unpeeled chunks of squash until soft, about 20 minutes.

The South Central Farm/ers: The Dream Reborn
Los Angeles, CA 11 May 2011--Today, the Los Angeles Times editorial board announced its support for restoring the South Central Farm (see below), once a fourteen-acre miracle of family agriculture in the heart of industrial Los Angeles. What the Times isn't saying here is that the land that was the Farm is in escrow according to reports received by the Farmers, with only four months left to find a way to return the Farm to the community before the land is sold. The Farmers are again relying on Angelinos to come to the aid of the legendary urban farm.
The South Central Farm is one of those rare causes that, in 2006, united Los Angeles across racial and generational divides. Thousands of people, some who had never been to South Central and others who lived there, stood in line side by side to hear Zack de La Rocha and Son De Madera do a benefit concert for the Farm. Tens of thousands contributed time and money to save the agriculture paradise they had "discovered" wedged between the train tracks and the trucking corridor. Word spread around the world and found support from farmers from South Africa to Oaxaca. Day after day, the ordinary and the famous, from Willie Nelson to Ralph Nader to Joan Baez to Danny Glover, made the pilgrimage to the Farm and tasted air that was palpably fresher, cleaner inside the chain link fence. Environmentalists Daryl Hannah, John Quigley, and Julia Butterfly Hill climbed trees and took turns in perches until the sheriffs drove two hook-and-ladder trucks across the crops to pull the tree sitters down. Hundreds who had camped on the land for weeks after the eviction notice were run off, and over forty-four protestors were arrested.
The Farmers' mission was and remains to provide fresh food to the food desert that is South Central Los Angeles. Today, they truck in food grown on their farm in Bakersfield, but they hold fast to the promise they made to the South Central community and all of Los Angeles back in 2006: Aqui estamos, y no nos vamos. We are here, and we're not leaving. The Farmers stand ready to restore the Farm.
The fight for green space, for community space, in recent years has coursed from Taylor Yard to the Cornfields to Ballona Wetlands to the South Central Farm. The Farm was a glimmer of beauty, a source of pride for a poor community and for a mostly concrete-covered urban metropolis. The land sits fallow, waiting to be a Farm again. To make that happen in just four months, the Farmers call on all of Los Angeles to help quickly.
The South Central Farmers are asking that everyone who has heard the story of the Farm take two actions now:
1. That you join the Farmers' mailing list
Time is short, and more actions will be needed, but this is where we start: Save the Farm!

Spring Onions
Nutrition: High in Dietary Fiber, Vitamin A, Vitamin C, Vitamin
K, Folate, Calcium, Iron, Potassium, Manganese, Thiamin, Riboflavin,

Storage: To
prepare, soak and wash thoroughly of all dirt and sand, and trim off the
roots; cut off the top of the greens, and slice the bulb into rounds.
More Info: In
America, what we term as the Spring onion has a slightly more rounded
and defined bulb and is typically larger than the slender and more
delicate green onion. The flavor has more bite and is somewhat hotter.
They can be used much like green onions, except you just need to
remember that they are slightly stronger. They are wonderful sliced very
thin and sautéed with fresh spring and summer vegetables and stir-
fries.

Collard Greens
Nutrition: Vitamins A, B6, C, K, folate, riboflavin; calcium, iron; lutein and zeaxanthin antioxidants; fiber.
Storage: Collard
stalks are too tough to be edible so remove stalks before using. Wash
greens thoroughly, checking for insects and dirt clinging to underside
of leaves. Greens should be wrapped in a damp paper towel, placed in a
sealed plastic bag, and refrigerated. Stored this way they will last up
to a week.
More Info: Collards
are not often eaten raw. They are tastiest sautéed with garlic and
onion or boiled in broth or salted water. Try them in a peanut sauce.

Swiss Chard
Nutrition: Vitamins A, C, E, K; calcium, iron, potassium; lutein and zeaxanthin antioxidants; fiber.
Storage: Store
in a loosely sealed plastic bag in the refrigerator, excess moisture
removed, for 3-5 days. Before using, cut leaves away from the stems.
Wash leaves in a series of bowls of cold water. Rinse stems and trim
blemishes.
More Info: Very
tender young chard leaves may be added to green salads. Cooked chard
leaves may be chilled and dressed with vinaigrette. Add raw sliced
stems or leaves to soups; allow 10 minutes to cook stems, 4-5 minutes
for leaves. Marinate blanched stems in a vinaigrette and serve at room
temperature. Combine cooked greens with eggs, milk, bread, and cheese
and bake (SIS, p. 203).

1 shallot, chopped
2 green onions, chopped
1/2 cup garbanzo beans, drained

| 1. | Heat olive oil in a large skillet. Stir in shallot and green onions; cook and stir for 3 to 5 minutes, or until soft and fragrant. Stir in garbanzo beans, and season with salt and pepper; heat through. Place chard in pan, and cook until wilted. Add tomato slices, squeeze lemon juice over greens, and heat through. Plate, and season with salt and pepper to taste. |

currently developing partnerships with a few organically/sustainably
farmed fruit growers to add a variety of fruit to the boxes. We are
committed to maintaining a relationship with farmers who do not use
pesticides and other chemicals that are harmful to the land, the worker
and the consumer.

we know our subsribers can confidently support and enjoy the wonderful

South Central Farmers' Health and Education Fund Opening Community Garden in South Central

SCF's non-profit organization is developing a community garden at 105th St. and Normandie Ave. in Los Angeles. This community garden will focus on creating space for local senior citizens and low income families to garden and provide food for their families and the larger community. (We know you've been getting a lot)
Nutrition: Low fat; saturated fat free; sodium free; cholesterol free; low calorie; high in vitamin A; good source of folate.
Storage: Rinse and dry romaine lettuce thoroughly on paper towels.
Refrigerate in plastic bag for use within 1 week.
More Info: Crisp
romaine lettuce is a highly nutritious leafy green to use in a green
smoothie. It has a mild flavor that is easily masked by fruit so it’s
perfect if you’re new to green smoothies or making it for picky eaters.
You can add an entire head of lettuce to a fruit smoothie and not
impact the taste at all. I typically toss in an entire head of romaine
in my morning smoothie. It provides 106 calories and gives me a super
jolt of nutrition first thing in the morning.

This recipe was from the April 2011 issue of Sunset magazine.
Creamy Lettuce and Leek Soup
Ingredients
· 1 1/2 pounds green lettuce, such as 1 1/2 large heads romaine or 2 heads butter lettuce
· 2 large leeks (white and light green parts only), split lengthwise, rinsed well, and sliced
· 2 tablespoons butter
· About 1/4 tsp. freshly grated nutmeg
· Zest of 1 lemon
· 3/4 teaspoon kosher salt
· 1/4 teaspoon pepper
· 1 qt. reduced-sodium chicken broth
· 1/2 cup half-and-half (consider using milk or non-fat half and half)
Preparation
· 1. Cut ribs from lettuce and chop. Chop leaves. Set both aside separately.
· 2. Cook leeks and lettuce stems in butter in a 5- to 6-qt. pan over medium heat with 1/4 tsp. nutmeg, the zest, salt, and pepper, stirring occasionally, until tender, about 10 minutes.
· 3. Stir in lettuce leaves and broth, cover, and bring to a boil over high heat. Reduce heat and simmer until lettuce is tender, 1 to 2 minutes.
· 4. Whirl soup in batches in a blender until very smooth, pouring as blended into a bowl. Return soup to pot and stir in half-and-half. Heat, stirring, over medium heat until steaming (don't let boil), about 2 minutes.
· 5. Ladle soup into bowls or cups and sprinkle more nutmeg on top.

Nutrition: Beets have lots of fiber, potassium, iron, and folic acid, a B vitamin. Betacyanin, the pigment that gives beets their color, is a powerful antioxidant.
Storage: Remove
leaves, leaving about an inch of the stems. Use leaves as greens- raw
or cooked. Store roots in a plastic bag in refrigerator for up to 3
weeks. Wash before cooking.

Place beets in greased 1 1/2 quart casserole.
Melt butter, blend in flour and sugar. Add vinegar and boiling water, cook stirring constantly until bubbling. Add remaining ingredients. Pour over beets.
Cover and bake at 350° F. for 25 minutes.

Our dear old delivery van “Roxie” is on her last
legs. After four years of faithful service, our 1986 Ford Econoline is
getting close to the 500,000 mile marker and will probably give out on
us any day now. “Roxie” has been absolutely essential to delivering our
CSA boxes each week, going to farmer’s markets, and dropping off
donations.
We are asking all our CSA subscribers to come together to help us raise the funds to purchase another used delivery vehicle, so that we can continue to keep our delivery commitments to you. If each of you were able to offer a donation of $50 to $75 we could purchase a lightly used delivery truck that would meet the needs of our growing CSA.

Fava Beans
Nutrition: Fava
beans are low fat, saturated fat free, cholesterol free, good source of
vitamin B1, copper, iron, magnesium, phosphorous, and potassium. An
excellent source of fiber, folate, and manganese.
Storage: To
store fava bean pods, place them in a plastic bag in the crisper
section of the refrigerator right away. The pods will keep for five to
seven days in the refrigerator.

Notes from the Farm

A few things to note this week:
~ Like many of you, we are being squeezed by the current economic
realities. The increasing cost of gas, of seeds, and pretty much
everything else is putting us in the unfortunate position of raising our
produce prices. Starting Wednesday, April 13th we will be moving up the lowest price of our CSA box to $20.
This rise in price reflects the real cost for us to produce a CSA box
(btween $20 and $30). We recognize that this could put a hardship on
some folks and we remain committed as much as possible to providing an
affordable CSA box. In the coming weeks we will offer a low-income
option for folks, but we also ask everyone to think seriously about what
they can afford and the importance of paying for the real cost of food.

Veggie of the Week

Cilantro
Nutrition: The herb is a good source
of
minerals like potassium, calcium, manganese, iron, and magnesium.
Potassium in an important component of cell and body fluids that helps
control heart rate and blood pressure. Iron is essential for red blood
cell production. Manganese is used by the body as a co-factor for the
antioxidant enzyme superoxide
dismutase.

Storage: Store in refrigerator with cut ends in a jar of water and leaves loosely
covered with a plastic bag for several days. Change water every 2 days.
Or store in a plastic bag for a week.

Spicy Cilantro Vinegarette- 1/3 cup(s) white-wine vinegar
- 2 tablespoon(s) cilantro, chopped
- 1/2 teaspoon(s) fresh thyme, chopped
- 1/2 teaspoon(s) ground red pepper
- 1/4 teaspoon(s) salt

- 1/4 teaspoon(s) pepper
- 3/4 cup(s) light olive oil
Directions
- Whisk vinegar, cilantro, thyme, red pepper, salt, and pepper together in a medium bowl. While whisking, add the oil in a slow, continuous stream until fully incorporated. Serve immediately.

Veggie of the Week

Turnips
Nutrition: Turnips
are a good source of Vitamin C and fiber. Turnip greens contain large
amounts of Vitamin A and very large amounts of lutein, which has been
shown to prevent cataracts and cardiovascular disease.
Storage: For
storage, wash roots, trim tops to 1/2 inch, place in perforated plastic
bags and store in a refrigerator. Greens can be washed and stored in
plastic and cooked like other greens.
More Info: Turnips grow wild in Siberia and have been eaten since prehistoric times.

I got this recipe on allrecipes.com and tried it. I’d use less butter and salt, but overall it is delicious:
Nana's Mashed Turnip By Daria K.
Original Recipe Yield 6 servings
Ingredients
* 1 large turnip, peeled and cubed
* 3 white potatoes, peeled and cubed (I used 4 small sweet potatoes)
* 1/4 cup milk
* 3 tablespoons unsalted butter
* 1 teaspoon white sugar (I didn’t add any sugar)
* 3/4 teaspoon salt
* 1/4 teaspoon pepper
Directions
1. Preheat oven to 375 degrees F (190 degrees C).
2. Place turnip and potatoes in a large pot with enough water to cover, and bring to a boil. Cook 25 to 30 minutes, until tender. Remove from heat, and drain.
3. Mix milk, 2 tablespoons butter, and sugar with the turnip and potatoes. Season with salt and pepper. Mash until slightly lumpy.
4. Transfer turnip mixture to a small baking dish. Dot with remaining butter. Cover loosely (with foil if don’t have a baking top), and bake 15 minutes in the preheated oven. Remove cover, and continue baking about 8 minutes, until lightly browned.
Author’s Note: To tell you the truth, I tend just to throw the veggies in a pan with some olive oil and call it a day. I start with olive oil, add some chopped onion or minced garlic and cook those for a little while. Then, I add the most durable veggies like broccoli, peppers and carrots. At this point I pour in some sweet cooking sake, a little dash of sesame seed oil and some soy sauce. Then, at the very end, I add the spinach or kale. But, it’s fun to try some different recipes. Happy cooking! And please email us your favorite recipes using South Central Farms’ veggies so that we can share them with others!

Kale (It just keeps coming...)

Nutrition: Vitamins A, C,
K; cancer-preventing com-pounds sulforaphane, isothiocyanate and
indoles; fiber. Also significant amount of Vitamin B6 and calcium.
Storage: Remove excess moisture and refrigerate in a loosely sealed plastic bag for up to 4 days. Before eating, wash thoroughly.
More Info: Slice
young kale leaves and add to salads. Mature kale is not typically eaten
raw. Sauté with corn and sweet red pepper. Sprinkle cooked kale with
vinegar; serve with polenta. Add raw kale to soups for the last few
minutes of cooking time. Mix leftovers with mashed potatoes to make the
Irish dish colcannon.

"In this era of online everything, I went out on a limb and asked my
mom if there were any vegetarian recipes that she could send my way. Of
course, with a mother like mine, in two minutes I ended up with a stack
of vegetarian cookbooks. I have never tried these out, so please let us
know how these go!
Okay…so, one book my mom
brought out she called “the oldest vegetarian cookbook ever.” It was
multi-colored, published in 1973 and had some really funny recipes:
Moorish Spinach, Cheesy Banana and an Avocado and Onion Jello Mold. For
your sake, I moved on.
Then, my twin sister brought down her Rachel Ray magazine:
Fusilli with Crispy Kale
Ingredients
* 1 pound black kale, stemmed, washed and dried
* About 5 tablespoons extra-virgin olive oil
* Salt and pepper
* 1 pound short or long fusilli pasta or curly spaghetti
* 1 pound hot or sweet Italian bulk sausage (optional)
* 3-4 cloves garlic, finely chopped
* 1 small Italian red cherry chili pepper or 1 Fresno chili pepper, seeded and finely chopped
* About 2 tablespoons fresh thyme leaves, chopped
* A couple of small sprigs rosemary, finely chopped
* About 1 1/2 cups fresh sheep’s- or cow’s-milk ricotta cheese
* Freshly grated nutmeg
* Shaved Pecorino Romano cheese
Preparation
Pre-heat the oven to 400°F. Dress the kale lightly with a couple of tablespoons olive oil; season with salt and pepper. Arrange the kale on two baking sheets and bake for about 15 minutes, rotating and switching the pans midway through.
Bring a pot of water to a boil, salt it, add the pasta and cook until al dente. Drain and return the pasta to the pot, reserving 1 cup of the pasta cooking water.
Once the pasta water is boiling, if using the sausage, in a large skillet, drizzle 1 tablespoon olive oil over medium-high heat. Add the sausage, crumbling the meat, and cook until browned. Using a slotted spoon, transfer the sausage to a plate. If you’re skipping the sausage, heat the skillet to medium. Add the remaining 2 tablespoons olive oil to the skillet , a couple of turns of the pan, and reduce the heat to medium-low. Add the garlic and chili pepper to the skillet and stir for a couple of minutes. Stir in the thyme and rosemary.
Whisk the reserved pasta cooking water into the garlic-chili oil, then pour it over the pasta. Add half of the crispy kale, the sausage (if using), ricotta and some nutmeg; toss vigorously to coat the pasta. Season with salt, pepper and nutmeg, to taste. Serve in shallow bowls and top with the Pecorino Romano cheese and piles of the remaining crispy kale.
