The ideas of using Google docs are better explained in the videos bellow, I will say that what makes google docs a potentially transforming tool for the classroom is the concept of sharing and collaborating in the creation and editing of documents. Think of the ideas of the "Parallel Text"  activity and how a tool like google docs may enhance the experience.
