We do not to resort to the usual vaccines associated with intensive poultry. 99% of poultry is vaccinated against diseases which have mutated and become strong in intensive situation. Our desire to treat any animals in our care with respect and dignity led us to invest time and money into the inevitable...... Killing this is not a subject usually acknowledged. Each of our birds is individually hand stunned then 'stuck' with a knife. The bird dies from lack of blood to the brain, whilst unconscious. Did you know that on automated killing lines where 4,000 birds per hour are killed 0.6% miss the stunning part (0.6% of 4,000 = 24 birds per hour!) This never happens at Providence Farm. Dry plucking removes the feathers without the bird being immersed in warm water. All other systems involve total immersion in tepid water and your imagination can tell you just how hygienic that can be at 4000 per hour! Our birds are 'hung' in the cold room to mature, this not only improves the flavour and texture, but is your insurance that any bacteria will be dead or dormant before cold evisceration takes place.
