Every few weeks I hold a Gourmet demonstration evening at either POST restaurant in Banstead, where I am executive chef at the restaurant on the first floor, or The Dining Room, my first restaurant in Reigate.

At these evenings, guests often ask me if I can send them the recipes that I demonstrate. Clearly, it's difficult to write everything down at the time!
