Barbara Wallace's Onion Delight
2 cups chopped onions
2 cups mayonnaise (can use light)
2 cups shredded Swiss cheese (can use light)
2 cups Parmesan cheese *
paprika
fresh or dried parsley
Heat oven to 350 degrees.
Mix together all ingredients, except parsley & paprika, in a large bowl. Spread into ungreased baking dish and sprinkle top with paprika an parsley. Bake 30 minutes. Allow to cool for 10 minutes; serve. (You may want to dab the top with a paper towel to remove some of the grease if you did not use light cheese. Serve with crackers and enjoy.
*Note: I used mozzerella instead of Parmesan.

Barbara Pam Honeycutt's Apple Torte
1-1/2 cups sugar ½ cup butter 2 beaten eggs 3 cups peeled chopped apples (Granny Smith) 1-1/2 cups flour 1-1/2 tsp soda ¾ tsp cinnamon 1/8 tsp salt 1 cup chopped nuts Mix together. Add nuts & apples last. Bake @ 350 for 35-45 minutes in a 9x13 greased pan. (check at 25-20 minutes) Butter Sauce ½ cup butter ½ cup white sugar ½ cup brown sugar ½ cup whipping cream 1 tsp vanilla Cook over low heat until slightly thick. Can make ahead and heat before serving. Really good when cake is hot. Whip remaining cream and serve on top. Can use Cool Whip. Kathy Sellers' Swiss Chocolate Cake:
1 Duncan Hines Swiss Chocolate cake mix (purchase at Piggly Wiggly)
3 eggs
1 1/4 cups milk
1/2 cup oil
Frosting:
1 8oz. pkg. cream cheese
1 cup sugar
1 cup powdered sugar
12 oz. Cool Whip
3 Hershey bars, chopped
1 cup nuts, chopped
Pam Honeycutt's Tomato Pie
9" pie shell partially baked 3 medium tomatoes diced and drained 3-4 spring onions diced Mix the above together & put in pie shell Cover lightly w/about 1/2 cup mayonnaise Sprinkle w/ 1/2 cup parmesan cheese Crush 3/4 cup of ritz crackers & sprinkle on top Bake @ 350 for 30 minutes or until light brown Ann McLaughlin's Tomato Casserole -- very similar ingredients to Pam's recipe
Crush 1 sleeve or pack of Ritz crackers into bottom of casserole dish.
Layer sliced tomatoes over the crackers.
Lightly spread mayonnaise over the crackers.
Sprinkle grated "Italian" cheese over the mayonnaise.
Repeat the layers (crackers, tomatoes, mayonnaise, cheese)
Bake at 350 until bubbly and the cheese is melted and lightly browned.
Note: "Italian" cheese is four white grated cheeses - provolone, parmesan, romano, & mozzarella.
