Causa is a latin american dish of layered ingredients, like lasagna, except that it is served cold. This tangy recipe makes a great refreshing side dish or even main dish enough for 6 servings.

INGREDIENTS:

Relish:

1/2 red onion, large, finely minced

1/2 cup white vinegar

1/3 cilantro bunch, finely chopped

salt and pepper to taste (preferably sea salt)

1 (8 ounce) jar roated yellow peppers, strained, finely minced

1/2 lime, juiced

Potato Paste:

2 pounds Yukon potatoes, scrubbed, washed

1 (4 ounce) can jalapenos, sliced

1 lime, juiced

1/4 cup oil (preferably canola)

Causa Layers:

1 (16 ounce) can lump crabmeat, strained

1/4 cup mayonnaise

1/2 lime, juiced

salt and pepper to taste

2 avocados, firm ripe

6  lettuce leaves, sliced

DIRECTIONS:

  • Grease 12 inch bread mold and cover with enough plastic wrap that it overlaps the sides in order to be able to tightly cover over causa.

Prepare relish:

  •  Place minced onion in bowl with vinegar 45 minutes. Strain. Discard vinegar.
  • Add cilantro, salt, pepper, 1/2 cup yellow peppers, lime juice and 1 tablespoon of jalapenos without their juice to bowl.

Prepare Potato Paste:

  • Place potatoes in pot with 2 tablespoons salt and cold water  to cover over by 2 inches. . Boil 25 minutes or until potatoes are tender when pierced.
  • Drain. Cool. Peel . Mash thoroughly. Add lime juice, oil, and 4 tablespoons of jalapeno juice. Keep mashing. Add salt and pepper to taste. Finish cooling in fridge.
  • Blend jalapenos along with their juice until smooth. Strain mixture, separating juice from pulp and keeping both.
  • Mix crabmeat with mayonnaise and lime juice. Season with salt and pepper to taste. Place in refrigerator.  Set aside 6 dollops of crabmeat for serving.
  • Cut avocado in half lengthwise, remove pit. Cut each in half again. Skoop out of skin. Cut 1/4 inch thick slices across each avocado wedge (not lengthwise). Season with salt, pepper, and sprinkle some lime juices over all slices.

Assemble Causa:

  • Spread layer of potato on mold bottom.
  • Layer with half of avocado.
  • Layer with half of crabmeat.
  • Press down firmly with back of spoon.
  • Repeat and finish with layer of potato on top.
  •  Fold plastic wrap over, press slightly and chill at least one hour.
  • Top with relish.

To serve cut slice of causa and place on lettuce leaves with a dollop of crabmeat.

Garnish with an avocado wedge, slices of hard boiled egg and drizzle with mayonnaise that has been thinned out with lemon juice.
