Beered Rice (Arroz Con Cerveza)


Don't worry about the alcohol in the beer, most of it evaporates while cooking and all that remains is the taste. This goes great with a side of steak or seafood.

INGREDIENTS:

2 slices smoked bacon, chopped

2 cups rice

1/2 orange, juiced

1 teaspoon salt

1 teaspoon oregano

1 teaspoon cumin, groung

3 garlic cloves, minced

ground black pepper to taste (about 1 teaspoon)

3 cups beer 

3 small plum tomatoes, chopped

4 cups green onions, sliced

1 cup spanish roasted red peppers, sliced

1 cup peas (optional)

DIRECTIONS:

  • In pot for cooking rice, fry bacon over medium high heat until crispy. Stir occasionally to keep bacon from sticking to pot.
  • Add oregano, garlic, and cumin.
  • Add rice and continually stirfry for one or two minutes until golden in color.
  • Add orange juice, salt, pepper, and beer. Bring to boil.
  • Stir in red peppers, tomato, green onions, and peas making sure rice is not sticking to bottom.
  • Cover and bring heat to low.
  • Cook until tender, about 15 to 20 minutes.
