30 - 1 3/4-inch baked minature phyllo shells (two 2.1 ounce packages)
4 ounce(s) of garlic herb goat cheese, softened 3 ounce(s) of Philadelphia Cream Cheese (regular or 1/3 less fat), softened 2 tsp. of pesto, homemade or store-bought 1 egg 1 tsp. of all-purpose flour 1/4 cup(s) of sweet red bell pepper, diced 2 tbsp. of pesto, for topping 3 tbsp. of fresh basil, finely chopped
Instructions:
Preheat oven to 325. Place phyllo shells on a large parchment lined baking sheet. For custard filling, in a mixing bowl, combine goat cheese, cream cheese, pesto, egg, and flour. Beat with an electric hand mixer on medium speed until smooth. Spoon mixture into phyllo cups, using a scant 1 or 2 teaspoons of mixture for each cup. Bake for 15 to 18 minutes or until shells are lightly browned. Garnish with a dollop of pesto, sweet bell peppers and basil. Serve warm.....and enjoy!!
