1 1/2 cups old-fashion rolled oats (not quick cooking) 1/2 cup white whole wheat flour 1/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 6 Tbsp unsalted butter, room temperature 1/2 cup pack brown sugar (light or dark) 1/4 cup sugar 1 large egg 1 tsp ground cinnamon 1 tsp vanilla extract 1/2 cup good-quality dark chocolate (70% solids), chopped
Preheat oven to 350 degrees. Whisk together oats, flour, baking powder, baking soda, and salt; set aside. Beat butter and sugars until light and fluffy. Add egg, cinnamon and vanilla; beat until combined. Gradually add oat mixture; beat until combined. Stir in chopped dark chocolate. Drop dough by round tablespoons, 2 inches apart, onto two baking sheets lined with parchment paper. Bake until cookies are golden but still soft, about 12 to 16 minutes.
