Black Eyed Pea Salsa

 

A great snack for the whole family that is packed with vegetables and the great fiber of the black eyed peas. 

 

Prep Time: 10 - 15 minutes

Cook Time: 0 minutes

Servings: 10-12

Ingredients:

-          2 (15-ounce) cans black eyed peas

-          ½ cup purple onion, finely diced (or green onion)

-          ½ cup cilantro, chopped

-          2 Tbsp White Wine Vinegar

-          1 tsp cumin

-          2 medium tomatoes, seeded and chopped

-          ¼ tsp salt

-          3 Tbsp fresh lime juice

-          2 cloves garlic, minced

-          ¼ cup olive oil

-          1 yellow bell pepper, diced

 

Instructions:

  1. In a large bowl, mix all ingredients together.  Mix well.  Place in an airtight container and place in the refrigerator.  It is best if stored overnight before serving.
  2. Serve with pita chips or tortilla chips.
