Make Ahead Turkey Gravy

Ingredients:                      
 1  tablespoon  minced onion
 3  tablespoons  butter
 1/4  cup  flour
 3   cups  chicken broth
 1/4  cup  sherry
 turkey pan drippings
 
Method:
Make veloute sauce: Saute onion in butter and stir in the flour, Cook roux for 3 minutes. Add broth, salt and pepper. More flour may be needed. Cook 15  minutes. Strain and refrigerate.
 
Drain pan of turkey drippings. Let set, then skim fat. Add sherry to pan and scrape to deglaze. Add remaining drippings and veloute sauce. Add turkey livers if desired. Check seasoning.
