Barbequed Marlin Fillets 

Ingredients :
  • 4 marlin fillets
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • a shake of all purpose seasoning
  • ¼ cup chopped basil
Place marlin in a bowl along with the soy sauce, honey, seasoning and basil. Mix well.
Preheat a char grill or barbeque. Add fish and cook for about 4 minutes each side or until cooked to your liking.


Italian Style Braised Marlin

Ingredients :
  • 3 tbl Olive oil
  • 2 x Marlin steaks, approximately 375g (12oz) in weight and 2cm (1 inch) in thickness, cut in half along the grain of the fish
  • 1 lrg Onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 1/2lb of Tomatoes, peeled, deseeded and roughly chopped
  • 2oz black olives, pitted 
  • Salt and freshly ground black pepper
  • juice of 1 lemon, 
  • 1/4 pint of water
  • 1/4 cup fresh basil, torn into pieces

Preheat the oven to 180 C, 350 F,
In an ovenproof casserole dish, heat the olive oil then seal the marlin steaks for 1 minute on each side. Remove and put to one side.

Saute the onion and garlic until softened. Then add the tomatoes, black olives, seasoning, and lemon juice. Cover and cook for 5-10 minutes.

Add the fish, then add the water to just barely cover the fish. Cover with a lid and place in the oven for 20-25 minutes, or until the fish is cooked.

To serve; place the fish steak on plates, spoon over the sauce and sprinkle with fresh basil and serve immediately.
