Caribbean Rice & Peas

Ingredients

1 1/2 cups red kidney beans from the can
2 cups long-grain white rice
2 cups of water
1/2 cup unsweetened coconut milk
2 scallions, chopped
2 Clove garlic, crushed
1 teaspoon thyme
salt, black pepper, and 1 teaspoon of Mama's hot pepper sauce


Directions

Boil the coconut milk and water with the beans, garlic, salt, black pepper and Mama's hot pepper sauce until the beans are tender.
When it comes to a boil, add in the rice.
Once liquid has dissolved turn stove to low heat for 20 minutes and simmer with lid over rice.

Stir with wooden spoon after cooking
