ANCESTRY.COM  /  ANCESTRY.CO.UK  Recommended 
Ancestry.com is the parent company and the one to use if searching for world-wide records.  Ancestry.co.uk deals only with records in the United Kingdom.  A paying site but one of the best to search for census and other records.  Having said that, Irish records are scarce and you don't get to see originals of Scottish censuses; for that you have to pay at Scotland's People.
NOTE: If the site doesn't want to accept your New Zealand credit card, you'll need to call 0800 442 100 (11am - 6pm Australian time) which puts you through to Australia, whereby you give your credit card details over the 'phone, or alternatively you can go to Ancestry.com.au and pay on-line.  You still get access to the UK records.  One month's subscription is usually enough and UK access only costs around $NZ25 as at 2008

A WORD OF WARNING: Subscriptions need to be CANCELLED at the end of the month, otherwise Ancestry will just renew the subscription and charge for it.  If you're ordering over the 'phone you can ask at the same time for your subscription to be cancelled in a month's time then you don't have to worry about it.

AUSTRALASIA BIRTHS, DEATHS & MARRIAGES EXCHANGE
A site where you can trade information and/or documentation at no cost.  Not a lot of records on there yet but it's a marvellous concept.

CELTIC SUPERSTITIONS

CHURCH OF JESUS CHRIST OF LATTER-DAY SAINTS    Recommended 
One of the best-known sites on the web.  I use this site a lot.  Using the search function, you can look for your ancestors all over the world.  Caution is needed though as there's no guarantee the information donated by people is accurate.  I tend to use the International Geneological Index (IGI) search as it quotes batch numbers (meaning the record has been sighted) so is more likely to be correct, but caution is still needed.  Can give you somewhere to start though.

CHURCH OF JESUS CHRIST OF LATTER-DAY SAINTS PILOT SITE   Recommended 
You can search thousands of records presently being transcribed.  I've found marriage records of English ancestors on there.

COMMONWEALTH WAR GRAVES
In the CEMETERIES file will be found in alphabetical order, all the cemeteries visited by Pierre Vandervelden including, as far as possible, the number, the identity and the nationality of the victims.

COUSIN CONNECT   Recommended 
This is the site where I've placed messages on boards and had the most success.  Easy to use.

CURRENCY CONVERTER
Convert the currency of one country to the currency of another (Useful for converting English pounds to New Zealand dollars).

CYNDI'S LIST
A very popular American-based site covering the whole world and with many thousands of links.  It has a useful A-Z subject list where you can find links to every possible genealogical topic.

DEGREES OF COUSINS
Understanding the degrees and levels of 'cousinship', e.g. Is this person my second cousin or my first cousin once removed?

You need to register but it's free. 
What happens basically is that you upload census information about your ancestors/relatives (you will need the official number of the record).  If others put up the same information, the site lets you know you've found some cousins.

ROOTSWEB   Recommended 
A free part of Ancestry.com.  It's really worth joining up to the Rootsweb mailing lists.  Once you do this, all messages of people with the same genealogical interests are delivered to your email inbox.  Look-up favours, e.g. census,  can be asked of other "listers".

THE INTERNET SURNAME DATABASE
A great database of surnames, their meanings and origins.

YUKON GENEALOGY
If your ancestor was chasing the gold, chances are he or she might've made it to Yukon.  The site includes a searchable goldrush database.
