Chicken-fried Pork Chops

Quick, easy and filling. 

Ingredients:

  • 1 cup flour
  • 1/2 cup corn meal
  • 1 tablespoon black pepper
  • 1/2 tablespoon ground sage
  • 1/2 tablespoon paprika
  • dash of cayenne
  • 2 eggs
  • 4 pork chops (boneless preferred)
  • vegetable or canola oil 

In a metal mixing bowl, combine all dry ingredients with a fork.  In a large skillet or frying pan, begin heating 1 1/2 to 2 inches of oil on a medium-high flame.  Beat eggs in another metal mixing bowl.  One at a time, place pork chop in eggs, making sure both sides and all crevices are coated, then place in the dry mixture, again making sure both sides are coated.  Once the oil is shimmering in the pan, place pork chops in the oil and fry, two at a time, for at least 7 minutes, then flip and fry an additional 5 minutes.  Carefully remove from oil with a fork and place on paper towels, then serve.  Great with mashed potatoes and gravy or corn on the cob and BBQ sauce.
