Kalbi Jjim ~ 갈비찜

Considered a comfort food, kalbi jjim is beef short ribs that are slowly simmered in a sweet and salty broth until the meat is literally falling off the bone.  Try this dish, which uses the same cut of meat as kalbi, to make a satisfying meal that is sure to please any kalbi lover.

Yield: 4 servings


Ingredients:
  • 2 lbs beef short ribs
  • 3 cloves garlic, sliced
  • 1 onion, chopped
  • 1/2 cup soy sauce
  • 1 cup water
  • 1 cup rice wine or vermouth
  • 3 T sugar
  • 2 tsp sesame oil
  • 3 carrots, peeled and chopped
  • 1 potato, peeled and chopped
  • 10 chestnuts, peeled
  • 2 tsp sesame seeds
  • Salt and pepper to taste
Directions:
  1. Place ribs in a large pot and cover with cold water.  Allow meat to soak for 1 hour to remove blood and bone debris.  Discard water.
  2. In another large pot, add the garlic, onion, soy sauce, water, rice wine or vermouth, sugar, sesame oil, and ribs.  Bring to a boil over medium heat, and then simmer over low heat for 1 1/2 hours (or until meat is tender), stirring occasionally.
  3. Add the carrots, potato, chestnuts, and sesame seeds, and simmer for another 20 - 30 minutes (or until vegetables are thoroughly cooked).
  4. Season with salt and pepper to taste.

My pregnant wife was craving kalbi jjim, so I decided to give this recipe a try.  Both of us are so glad that I did!  The meat was tender, juicy, and full of flavor.  I added 3 green onions and 10 jujubes in addition to the potato, chestnuts, and carrots.  Perhaps my wife and I were starving, but the yield estimate seemed a little on the low side!  I would say this recipe makes enough for 3 people.  But overall, a fantastic recipe!
