November 2009 - A Recipe for Good Times By Mickey Bellman Take one acre of Oregon Jory soil. Add 725 Pinot noir grape vines, 150 wooden posts, and 11,000 feet of trellis wires. Baste with copious amounts of Oregon sunshine, winter rains, and plenty of sweat. Wait four years until grape clusters ripen, and then harvest said clusters. Next, de-stem and crush the two tons of grapes. Place in large steel fermenting tanks and add yeast. Gently stir the luscious red must for 3-4 weeks until wine has been created. Filter liquid into oak barrels and hold quietly for another year in a wine cellar. Transfer the wine, place in bottle and seal tightly with natural cork. Store bottles for another year until the red gold has become reached perfection. Remove bottles from storage, uncork, and enjoy this lovely liquid. Serve to guests and savor the flavors of Oregon’s world famous red wine. Repeat as often as desired—any sunset, dinner party or festivity where fine wine and good taste is appreciated.
