Recipes

Chicken B.A.M.F. (I named it after Samuel L. Jackson, so figure it out, as I want to keep this site family friendly. :p )
Ingredients:
4 to 6 frozen chicken breasts
1 bottle A1 marinade (Chicago or New York steakhouse; use anything less spicy, call your version Chicken Wimp)
1 small can diced green chiles OR at least 6 diced fresh green chiles (can use hotter peppers if you want; I generally fix this for people who have fairly weak constitutions, or I'd be using jalapenos)
Instructions:
Boil the chicken in a pot of water for 25 to 40 minutes depending on how much chicken you use.
Put the chicken in a casserole dish or any other container that can hold all the chicken pieces placed side by side and is microwavable, then cover with the marinade and green chiles (or whatever peppers you used) and either skip to the next step or place in the refrigerator for 30 minutes to one hour.
Take the chicken, still in the container, and place in the microwave for 2 minutes or however long enough it takes to reheat if it you refrigerated it on High. (This step is mainly to heat up the marinade and peppers)
I generally serve it with garlic bread and mashed potatoes, but it would also be good with the chicken placed over rice.

Loaded taters
Ingredients:
2 to 4 baking potatoes
1 lb ground hamburger or turkey (optional if you're a vegetarian)
1\2 or 1 whole onion, diced (optional)
1 package of shredded cheese (your choice as to size and type - I usually use cheddar or a Mexican blend which is monterrey jack, cheddar and asiago)
sour cream
green onions or chives (optional)
Instructions:
bake the potatoes, cook the meat if you used it (and the onion, if you used it), then cut the potatoes in half (but not all the way through!) down the middle, and pile on the other ingredients.

My favorite sandwich
Note: I'm not giving amounts to use here; you can figure it out for yourself.
Ingredients:
Sliced deli roast beef
sliced smoked cheddar cheese (smoked cheddar is a must for this to make it the way I do - no other cheese is acceptable)
pumpernickel bread
mayo
Instructions:
Spread some mayo on the bread and top with smoked cheddar then roast beef. Place on a plate or paper towel and microwave on High for about 10 to 15 seconds - just enough to warm the cheese a bit without melting it.
If you don't like mayo and want to use something stronger, don't bother using smoked cheddar, as mustard, horseradish and other condiments will cover up too much of the taste of the cheese to make it worth the expense of the cheese.

I have a few more recipes I'll post later, but as you can see, it is mostly quick stuff you can throw together fast. I'm not exactly a gourmet chef.
