Chopped pieces of semi-ripe papaya float in a solid almond jello pool. Although we were pre-warned that this was a chilled dessert, my usual association with a whole papaya served this way (and not just as the fruit itself) is in the form of a hot Chinese dessert (i.e. in a sweet soup or filled with the steamed milk custard). Needless to say, digging into the solid almond agar was less than thrilling (it's not even silky smooth like custard, it's solid jello!) as I'm not too fond of almond jello (it's like how I don't really like coconut on its own - too perfumey). After finishing my portion of the dessert I was left wanting the traditional Chinese dessert version - hot and filled with milk custard. Boo. I have to confess that serving food on a folded napkin fool my brain. In no way does the item add any flavour to the dish, but perhaps serves an addition purpose to wipe up any mess that might result from the foodstuff's consumption, however it makes the course look fancy. Lets face it, this is just a whole papaya, and it's appearance on a lotus fanned napkin is comical.
