Google Docs has templates that you can choose from.  It makes Google Docs more like Publisher!
 
 

Now Google Spreadsheets has the option to only publish certain sheets or cells of the spreadsheet.
When you are going to Publish a spreadsheet look for "More Publishing Options"

Using Docs as a Grade book Examples
