Ingredients:
Main: - 225 (8 oz) self-raising flour
- 1 Tbsp sugar
- pinch of salt
- 1 egg
- 2 Tbsp melted butter
- 340 ml (12 fl oz) milk
Topping: - 115 g (4 oz) roasted groundnuts
- 60 g (2 oz) roasted sesame seeds
- 115 g (4 oz) butter
- 60 g (2 oz) castor sugar
Method:
- Mix flour, sugar and salt.
- Beat egg and blend with melted butter and milk.
- Make a hollow in the flour and pour in mixture, a little at a time. Mix with flour to form a smooth batter. Allow to leaven for 2 - 3 hours.
- Grind finely roasted groundnuts.
- Pound roasted sesame seeds a little to enhance flavor.
- Leave butter in room temperature to soften.
- Heat small, flat pan. Over high fire, spread 1 ladleful batter evenly to cover whole surface. When crumpet is almost done, sprinkle 2 tsp each of groundnuts, sesame seeds and sugar.
- Place 1 tsp butter in centre and cover for 2 - 3 minutes.
- Remove from pan and fold into 2.
