Katie’s “Did you make that from scratch?” Applesauce


Makes about 3 gallons (48 cups, 72 2/3 cup servings, 96 ½ cup servings)

2 #10 tins of unsweetened applesauce
1 #10 tin of unsweetened apple slices
1 6-8 oz of lemon juice (a plastic lemon or bottle of frozen lemon juice)
Cinnamon to taste
May add a little of any desired sweetener

May heat and simmer gently to mush the apple slices a little.

Note:

No. 10 tins hold about 25 servings
                          about 13 cups 
                          100 to 110 fl. oz.

Hint for Meat Loaves for Large Group

Pack mixtures into a 10-inch loaf pan to mold the shape of the meat loaf.  Turn the meat loaf out of the pan onto a baking sheet.
 You can cook several loaves at a time.

Carol's Scalloped Potatoes


1 bag "Costco" hash browns: frozen, put into huge bowl and partially thaw.
1/2 C. butter Melt in pan and saute onions
1 bag chopped onions (12 oz.frozen) or medium onion, chopped
2 cans cream of chicken soup
2 C. sour cream
salt and pepper
2 C. shredded cheddar cheese of Montery jack

Mix all of the above together and spread in a 9x13 pan.

Bake at 350 deg. F for 35 to 40 minutes (or longer), until bubbly.


Estimate: A 9"x13" pan should serve 20 people or so.
However, Carol says she has made a couple batches for Tent City.
