Two sea scallops on a bed of artichokes, tomatoe-thyme "concasse," fava beans and bacon. The scallops are garnished with a sweet corn puree.

Scallops were spectacularly prepared and seasoned. Carmelized on both sides yet meltingly velvety-rare on the inside - quivering at my knife rather than bouncing. The corn puree was a little unnaturally sweet - but immensely fresh-tasting - perhaps an early crop? The tomato-thyme concasse was uninteresting, although the artichokes were nice - just a bit tangy. No fava beans in sight.

The one failure in this dish was the bacon - the bits had gone soggy soaking in the concasse and ended up being chewy and flavorless... nasty.

At $16, this starter was a bit steep.

I made a balsamic dressing with olive oil (you don't know how much I love balsamic) and marinated grape tomatoes in the dressing for a while before the scallop was cooked. The scallop was seared in butter....a lot of butter. I felt like Paula Deen searing the scallops. Tracy, to make my dish more colorful, decided to thinly slice and spread fresh tomato the "Martin Yan way" (named so by me 'cause I saw it from him first not 'cause I think he made the technique). I really like balsamic and scallops....and tomato and scallops. I thought...I'll just try it together. It wasn't bad, actually. Though...I think I prefer Tracy's scallop garnish a lot better.
