Roasted Beets with Walnuts & Blue Cheese

I always thought I didn't like beets... but then I tried this recipe.
 
 
Ingredients:
 
1 lb. small beets
1 T olive oil
1/2 cup walnuts
2 T olive oil
blue cheese
black pepper
 
 
Preparation:
 
Preheat oven to 350 degrees.
Wash & trim beets but do not peel them.
Toss beets with olive oil in a bowl and transfer to a baking sheet.
Roast them until they are tender when pierced wtih a fork, 40-90 minutes depending on size.
Remove beets from oven and set aside until cool enough to handle.  Remove skins and discard (if desired).
Cut the beets into wedges and place in a small serving bowl. 
Add the walnuts and olive oil, toss and add black pepper and blue cheese and serve
