Coconut Flan

Ingredients:
 
5 eggs
1 can sweetened condensed milk
2 cans of coconut milk (Goya or any brand you like) or 2 cans of coconut
1 tsp vanilla extract
2 tsp coconut extract
1 cup sugar
 
 
Preparation:

Preheaat oven to 350 degrees
 
Mix all ingredients (except sugar) together in a bowl/mixer
 
Caramelize 1 cup of sugar; place in bottom of ramekin (1 large or individual ones).  Place in a water bath and bake at 350 degrees until slightly brown.  Cool and serve.  I usually put in the refrigerator after cooling and serve the next day.
