Breakfast with vacuum-method coffee and an interested cat. I have been avoiding this recipe until life seemed peaceful enough to include making coffee in a chemistry lab set-up. It was actually easy, and the coffee is very tasty! The two globes during the brewing process rest on top of each other, of course, and when the water in the lower carafe boils, it forces itself into the upper globe (which has the coffee grounds). When the coffee cools in the upper globe after brewing, it is sucked by vacuum pressure back down into the lower globe. Pretty amazing! I will probably use this little system more than I thought I would. Breakfast this morning: sunny-side up eggs, sausage patties and Schwan's little baker potatoes (an excellent invention, much better than hash browns).

On a cool, rainy day like yesterday, sometimes you just need a little comfort food! This is a healthier version on the old stand by without all the fat and cholesterol! 2 large Russet Potatoes, peeled and cut into small cubes 1/2 red onion, chopped fine salt pepper extra virgin olive oil Heat skillet over medium to high heat with a very thin layer of olive oil. Place potato, onion, salt and pepper into hot pan in a think layer and cook, stirring occasionally, until golden brown. Makes 4-6 servings. Serve immediately.
