Day 2: 3/28/11 -- Bourbon-Bacon Scallops over Ginger, Scallion, Garlic rice with Steamed Vegetables The Bourbon-Bacon Scallops are from "The Complete Cooking Light Cookbook." I served over a bed of rice with fresh ginger, garlic, and scallions alongside a saute of red onions, red and green bell peppers, snow peas, and broccoli. Things of note: bacon cooks infinitely slower than scallops, so to avoid the absolute destruction of some very good bivalves, I compromised on the crispiness. Next time, I'd do a few things differently: 1. Partially cook the bacon first before wrapping the scallops. 2. Cut the bacon to fit better around each scallop (I was in a hurry to get dinner on the table). 3. Cook in pan instead of under broiler (my broiler is absolute crap, as I'm coming to realize).
