Cooking Lab: Chinese - ????? Liang Yang Zha Zhi Ji - Fried Chicken Wings and Breast Known as ''Kara-age'' in Japanese. Basically Chinese KFC Breast and Wings. The important points that I learned when making these were the preparation of the wings themselves and the proper way to deep-fry. The wings are turned inside out into a 'tulip' shape and coated with egg and starch. Then it is deep-fried *twice*. The 1st time at medium heat in order to cook the inside of the chicken to around 80%, then a second time at high heat in order to create a crispy shell. Also, it cuts the oiliness of the chicken. (at high heat, oil becomes almost like water and just runs off of these things like off a duck's back. ;) ) Deep Fried Tofu
This is the shot taken at the Tofu Festival. For health reason, I do not recommended any deep fried food. You can see from the quality of the cooking oil here. Originally, Tofu is a health food, but after deep fried, it is really bad for health. So for your health, try not to have deep fried food for yourself & your love one.
