Ingredients 1 bunch long beans, washed and trimmed at the ends 1/4 cup onion, chopped 1/2 Tbsp garlic, minced Extra virgin olive oil spray 1/3 cup chicken broth 1/4 cup toasted pine nuts 2 sun dried tomatoes, chopped Garlic sea salt and fresh ground pepper, to taste Directions 1. Heat a large, straight sided skillet over medium high heat and spray with the EVOO spray. 2. Add the onion, season with garlic salt and pepper and sauté for three minutes and then add the garlic and sauté another minute. 3. Add the beans, some additional salt and pepper to taste and coat beans with EVOO spray. Sauté for two minutes, then pour the chicken broth in and stir to loosen the brown bits at the bottom of the pan. Reduce heat and cover. Simmer for six minutes until the green beans are crisp/tender. 4. Top with the toasted pine nuts and sun dried tomatoes. |
