Jalapeno Spiced Black Beans from Closet Cooking
(makes 4 servings)

Ingredients:
1 tablespoon corn oil
1 small onion (chopped, optional)
1 clove garlic (chopped, optional)
1 jalapeno (diced)
1 teaspoon cumin (toasted and ground, optional)
1 (19 ounce) can black beans (drained and rinsed)
1/2 cup water (optional)

Directions:
1. Heat the oil in a pan.
2. Add the onion and saute until tender, about 3-5 minutes.
3. Add the garlic, jalapeno and cumin and saute until fragrant, about 1 minute.
4. Add the beans and water and bring to a boil.
5. Reduce the heat and simmer until most of the liquid has evaporated.
6. Mash some of the beans with a fork if desired.
