Fried Green Tomato and Shrimp Remoulade Po Boy from Closet Cooking (makes 4 sandwiches) Ingredients: 1 pound shrimp (shelled and deviened) 1 tablespoon oil 1 tablespoon creole seasoning 1 baguette (cut into 4 sandwich sized lengths and sliced in half) 1 cup lettuce (shredded) 6 slices fried green tomatoes (about 2 tomatoes worth) 1/4 cup remoulade sauce Directions: 1. Toss the shrimp in the oil and creole seasoning to coat. 2. Saute in a pan until cooked, about 2-3 minutes per side. 3. Assemble the sandwiches and enjoy! |
