Avgolemono Sauce from Closet Cooking
(makes 1 cup)

Ingredients:
2 egg yolks
1 lemon (juice)
1 cup broth (chicken, vegetable, etc., warm)

Directions:
1. Whisk the eggs until frothy.
2. Slowly whisk in the broth.
3. Heat in a small sauce pan while whisking until the sauce thickens. (Do not bring it to a boil.)
