Panettone Bread Pudding 1 pound panettone, cut into cubes (about 4 to 5 cups) 8 eggs 1 1/2 cups cream 2 1/2 c. milk (I used skim) 1/4 c. rum 1 cup sugar 1 T. vanilla freshly ground nutmeg Butter a large casserole (9” x 9” inch square or similar) and put the cubed panettone into the casserole. Beat the eggs with a whisk, and add the rest of the ingredients. Mix well and pour the liquid over the bread cubes, soaking all the panettone. Bake at 350 for 35-45 minutes, depending on the depth of the casserole, until golden and puffed. |
