Michael has worked, worried, studied, taught, consumed and all but died in the hospitality industry for close to 30 years,  ranging from the Shores of Seaside, NJ to the Northern California Shores;from the upper peninsula of Michigan to the Low Country of Charleston, South Carolina and everywhere in between.
 
 In 1992 Chef Michael worked by invitation under a Chef in La Paz, Mexico studying the intricacies of authentic Mexican/Central American cuisine. 
 
In 2004, Michael was one of six chefs from the US and twenty-six internationally chosen to participate in the International Gourmet Festival in Puerto Vallarta.


Michael claims his forte to be in diversity, applying the knowledge  he has accumulated over the years, combining the traditional Mother Cuisines and Down Home Cooking with his love of "Cuisine Americana" including Southwestern, Cajun and Creole styles of cooking, yet always happy to slip in a little of his Asian influences which all contain that one ingredient that goes into all that Michael prepares...

If anyone learns anything from me or from my site, I hope that you learn that you must learn to mix your own creative juices with whatever you are taught...be it my food or any other phase of this universal world known as Culinary Art

 

My recipes are designed to help the professionals as well as the home cook have more fun cooking and take the chore out of and enjoying otherwise complex foods
