lemon chicken
one of my favourite recipes these days, because it's so easy. Take a whole organic chicken and marinate it in lemon juice (one lemon) and olive oil for an hour. Add 2 cups of brown or wild rice mix into a Romertopf, add 4 cups of chicken stock and the juice of anohter lemon and some zest if wanted. Then season the chicken with paprika, pepper, salt and some garlic and put it on top of the rice. Add some diced bell peppers or other veggies on top of the rice and put the bird into the oven for about an hour. Remove lid of the Romertopf and roast for another half hour or until crispy.
