1 cup unseasoned breadcrumbs 2 Tbsp + 1Tbsp flour, divided 1/4 can concentrated citrus juice, your choice of flavor 2 boneless, skinless chicken breasts Preheat oven to 425; turn on grill. In a small bowl, whisk together the breadcrumbs and flour, then put the dry mixture in a square cake pan. Add the juice concentrate to the pan, and mix together with hands. (Yes, your hands will get cold!) Put the remaining flour on a plate. Rub chicken breasts in flour, then transfer to the cake pan. Coat the chicken with the breadcrumb mixture. (The firmer you press, the more thoroughly the chicken will be coated.) Char the chicken 5-10 minutes on the grill, turning about halfway. Bake the chicken for 10-15 minutes, or until done. Serve with your choice of sides. And if you mix the juice up, you've got a great complimentary drink to go along with your meal. (If you choose rice as one of your sides, you can even add some of the juice to the water, to keep the flavor congruent.) The great thing about this is the citrus flavor isn't overwhelming. And any flavor of citrus juice (orange, orange-pineapple [the one I used], lemonade, grapefruit, etc) is completely up to you. Let me know how this turns out, if you choose to make it! Homemade Chicken Noodle Soup
Felt like having some comfort food... Recipe: 4 boneless skinless chicken breasts 4-5 small carrots peeled and roughly chopped 3-4 ribs of celery roughly chopped 1 medium onion chopped 1 bag egg noodles 1 bouquet garnis (small satchel of herbs) 4 cubes chicken boullion garlic powder to taste salt to taste pepper to taste Place onion, bouquet garnis, boullion, salt, pepper, and garlic powder in a large pot of water (7-8 cups) and bring to boil. Place chicken breasts in pot and cook until done, about 20-30 minutes. Once done, remove chicken breasts to cutting board and roughly shred. Remove onion, bouquet garnis, and any chicken scum that has come to the surface of the water. Add carrots and celery to pot and cook until tender, about 15 minutes. Add chicken back to the pot along with noodles, cook for another 10-15 minutes or until noodles are just cooked. Serve with warm bread or crackers.
