Crunchy Baked Chicken Breast with Spring Salad
Recipe adapted from America's Test Kitchen's recipie "Crunchy Baked Pork Chops". 1 chicken breast, split 2 slices hearty white sandwich bread , torn into 1-inch pieces 1/2 small minced shallot (about 1 tablespoons) 1 large garlic clove , minced or pressed through garlic press (about 1/2 tablespoon) 1 tablespoon vegetable oil 1/8 teaspoon Ground black pepper 1/8 teaspoon Salt 1 tablespoons grated Parmesan cheese 1/4 teaspoon minced fresh thyme leaves 1 tablespoons minced fresh parsley leaves 1/8 cup unbleached all-purpose flour plus 2 tablespoons 1 large egg white 1 tablespoons Dijon mustard Lemon wedges 1. Adjust oven rack to middle position and heat oven to 350 degrees. Rinse breasts under cold water and dry thoroughly with paper towels. 2. Meanwhile, pulse bread in food processor until coarsely ground, about eight 1-second pulses (you should have about 1 cup crumbs). Transfer crumbs to rimmed baking sheet and add shallot, garlic, oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Toss until crumbs are evenly coated with oil. Bake until deep golden brown and dry, about 15 minutes, stirring twice during baking time. (Do not turn off oven.) Cool to room temperature. Toss crumbs with Parmesan, thyme, and parsley. 3. Place 1/8 cup flour in pie plate. In second pie plate, whisk egg white and mustard until combined; add remaining 2 tablespoons flour and whisk until almost smooth, with pea-sized lumps remaining. 4. Increase oven temperature to 425 degrees. Spray wire rack with nonstick cooking spray and place in rimmed baking sheet. Season chops with pepper. Dredge 1 breast in flour; shake off excess. Using tongs, coat with egg mixture; let excess drip off. Coat all sides of breast with bread crumb mixture, pressing gently so that thick layer of crumbs adheres to breast. Transfer breaded breast to wire rack. Repeat with remaining breast. 5. Bake 20 to 25 minutes. Let rest on rack 5 minutes before serving with lemon wedges.
Chicken & Potatoes (12/21/07)
Chinese Style Chicken 4 bonless, skinless chicken breasts 2 tbs sesame oil 1 garlic clove, minced 1 tsp 5 spice powder 1/2 cup chicken broth 1 tbs Hosin sauce 2 tbs Soy sauce 2 tbs unsalted butter 1 scallion, thinly sliced Fresh cilantro, chopped Salt and pepper to taste Season the chicken with salt. Heat the sesame oil in a large pan over medium heat. Add the chicken. Brown on both sides and cook until the chicken is cooked through. Remove the chicken. Mix together the broth, hosin sauce and soy sauce. Add this mixture along with the garlic and 5 spice powder to the pan. Scrape up any chicken bits left in the pan. Boil until the sauce becomes thick and glossy. Remove the pan from the heat and whisk in the butter. Spoon the sauce over the chicken and garnish with the scallion and cilantro. Oven Roasted Potatoes 4 small to medium red potatoes Moraccan Seasoning (or herb mixture of your choice) Olive Oil Salt Preheat oven to 450. Quarter the potatoes lenght-wise. Line a baking sheet with foil. Put the potatoes on the foil. Sprinkle on the salt and seasoning. Drizzle on some olive oil. Toss everything together with your hands. Bake in the oven until golden brown and delicious. About 20 minutes.
