“This is sure to warm you up on the coldest of winter nights!” Rating: ****very difficult Adult supervision required Ingredients: 4 tbsp canola oil 1 medium onion (chopped) 1 clove garlic (minced) 1 tsp cilantro 1 tsp cumin 2 large boneless, skinless chicken breasts, diced 1 15-19 oz. can white kidney beans (drained) 1 can garbanzo beans (drained) 1 12 oz. can white corn (drained) 2 4 oz. cans chopped green chilies (drained) 1 1/2 cups chicken broth 1 cup shredded Monterey Jack Cheese 1 8 oz. carton sour cream (optional) Hot Pepper sauce (optional) Directions: •In stockpot or crock pot, heat oil on medium heat. •Add diced chicken, salt and pepper to taste; brown chicken until cooked through. •Add onion, garlic and cumin – cook until onion is transparent and tender. •Add white kidney beans, garbanzo beans, corn, green chilies and chicken broth. •Reduce heat and simmer 50 to 60 minutes. To serve: Stir in hot pepper sauce to taste. Top with a dollop of sour cream and shredded cheese. Garnish with cilantro. Yields 8 servings

Gina's Weight Watcher Recipes Servings: 10 servings • Size: 10 oz Prep Time: 5 minutes • Points: 4 ww points 1 onion, chopped 1 16-oz can black beans 1 16-oz can kidney beans 1 8-oz can tomato sauce 1 package frozen corn kernels 2 14.5-oz cans diced tomatoes w/chilies 1 packet taco seasoning 1 tbsp cumin 1 tbsp chili powder 24 0z. (3) boneless skinless chicken breasts chili peppers, chopped (optional) chopped fresh cilantro Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).
