Slow-Cooker Ropa Vieja

We made this dish based on the Cook's Illustrated recipe. This classic Cuban Creole dish combines shredded beef with bell peppers and onions in a flavorful sauce and is served with rice. It was really tasty and the morning preparation part was fine. But, the steps to finish things up before serving were pretty involved and not as simple as you'd like for a weeknight meal.
