Pumpkin Cookies

October 16, 2006 Ingredients: 1 cup butter, softened 1 cup firmly packed light brown sugar 1 large egg yolk 2 1/2 cups all-purpose flour 1 tablespoon pumpkin-pie spice 1 teaspoon baking soda 1 tube (4.25 ounces) orange icing 1. Preheat oven to 375F. Line baking sheets with parchment paper or leave ungreased. 2. Cream butter with brown sugar in a medium bowl with an electric mixer on low until smooth; stir in egg yolk. 3. Mix flour, pumpkin-pie spice and baking soda in a large bowl. Sitr in the butter mixture. Mix until dough is firm and smooth. Form dough into a disk; wrap in plastic wrap and chill dough for 20 minutes. 4. Roll dough to a 1/4-inch thickness on a lightly floured surface. 5. Cut out cookies with a 3 1/2-inch round cookie cutter and place 2 inches apart on prepared baking sheets. Bake until lightly browned around the edges, 10-12 minutes. Remove from oven and transfer cookies to wire racks; cool completely. 6. Create faces on pupmkin cookies using the orange icing. makes 2 dozen cookies

Cardamom. Cinnamon. Almonds. Brown sugar. Grated lemon peel. These cookies would be worth baking for the scent alone. More photos below. ETA: Here comes the recipe. I've found it online, but, sadly, I don't remember where, so I can't link back :( INGREDIENTS: 125 g butter 100 g brown sugar 1 egg 200 g flour 50 g potato flour 2 tsp cinnamon 1/2 tsp cardamom 100 g ground almonds grated lemon peel from 1 lemon Beat butter and sugar together, add the egg. Stir together both kinds of flour, salt, cinnamon, cardamom, almonds and lemon peel; add to the butter. Beat all the ingredients together. Make a ball out of the dough and put it in the fridge for 1 hour. Roll out the dough until ca. 1/2 cm thick and cut out cookies. Bake for 8 – 10 minutes at 175C.
