First you boil pork bones to make a stock, and then you add onions, diced white sweet potatoes, whole cherry tomatoes, pork tenderloin slices and arugala in stages. Season to taste, then serve with dumplings, bread or crackers to soak up the leftover stock. It's like the bizarro version of the Jewish chicken soup that is my birthright. If you're trying to find a way to use up some turnips - throw them in. If you want to give it a garlic kick - knock yourself out. I created my stock by boiling pork bones in chicken stock as opposed to water. This gave the soup/stew a lot more flavor. The other key thing is to slice the pork as thin as you can with a knife for maximum tenderness. Also, you may want to soak and ring out the arugala (or watercress, if you can find it) before you adding it to the soup in order eliminate some of the bitterness. Or, just use spinach.
