Sancocho de Gallina (what I had for lunch) My recipe is not traditional, but it works. 1 large can of Swanson Chicken stock 6 chicken pieces, I use rib meat 1 bag of Goya veggies, yucca, green plantain, yam, pumpkin 2 ears of corn cut in thirds, (I use Colombian corn) 8 small yellow potatoes bunch of cilantro salt and black pepper 6 cloves of garlic I first crush the garlic and fry in a bit of bacon fat with a bit of black pepper and salt. I then add the chicken and brown well. I pour the chicken stock and about 2 cups of water into a large pot and bring to a boil, then I add the chicken and about half of the cilantro chopped coarsely. I reduce the heat and cover and let simmer for about an hour. I then remove the chicken and remove the skin and bones (I skip this step if cooking for myself and my wife). Into the pot I add the green plantains and the whole unpeeled potatoes and simmer for 30 minutes. Then I add the rest of the veggies and return the chicken and salt and pepper to taste and cook another 30 minutes. I serve with more fresh cilantro sprinkled on top, white rice on the side and a half avocado.
