Pea and Pesto So it's getting cold here. I'm starting to crave things like custard ( don't even get me started on that mission) and soup. This recipe was a first for me, and so very easy. Pea and pesto soup, made in about 10 minutes, excluding the time it took to make the pesto (which I wouldn't buy from the local store, as it had random ingredients in that had no right being a part of pesto)... Cannot take credit for the soup recipe ( Nigella Lawson "Express" Series ) but the pesto was my own, after reading some books. Satisfied the cravings? Totally. Ohhh, so totally. (note - this is much more green looking in real life. note to self... shoot food somewhere other than kitchen, or change lights !!) Makes enough for 2 big bowls 750ml water 375g frozen peas 2 spring onions, trimmed but whole 1 tsp sea salt ? tsp lime juice 4 x TBSP fresh pesto ( i used my recipe in total) 1 Boil water. (eh. no brainer) 2 Add the frozen peas, spring onions, salt and lime juice to the pot and let everything boil for 7 minutes. 3 Discard the spring onions and blitz the peas and their liquid with the pesto in a blender. My pesto - in a mortar and pestle, mash up 1/2 cup fresh basil leaves; 2 TBSP pine nuts; 2 cloves garlic; about 3TBSP extra virgin olive oil, 1/4 tsp sea salt. You could add a bit of scallion or something, but I didn't want to overpower the soup. This is so good... actually, just typing this, I've worked up enough craving for another bowl ! Day 5: Orange you glad it's Friday?
When I packed my lunch, I noticed most everything was in the red / orange / yellow end of the spectrum, even my coffee mug. I didn't cook last night. I ate some more of the stir fried chicken and veggies from earlier in the week. So I had to repeat my lunch, with more pumpkin soup. But I'm not complaining. In prepping the eggs, the cayenne FELL out of my shaker. It's gonna be spicy!! Good news for the day, I'm down two pounds! Now, I'm trying not to get too excited. Weekdays are generally pretty easy for me, food-wise, because they are so structured. But weekends are for relaxing and socializing and splurging. That's where I get off track. Typically, by Monday or Tuesday, any losses I had during the week come right back. I'm going to try and change that this weekend.
