It looks like some sicko science experiment. 4 qts. of water 1 cup Morton's kosher salt (use less if using table salt) 1 cup sugar 4 lb. chicken 8 hours in the refrigerator. Rinse thoroughly, dry, butter and herbs (no salt) under the skin, roast whole at 400? for 20 min per pound... yum! I use a vertical roaster and think it's the best.

our lighting is horrid at night but this is the cooked chicken with vegis the vegis are the best......the chicken is ok....i smeared mine with garlic and did make the sauce and invert the chicken to keep the breast moist i think i prefer thomas keller's roast chicken recipe
