Steak Fajitas and Refried Beans Steak Fajitas 1/2 c. oil 1/3 c. lime juice 1 pkg. dry Ranch dressing mix 1 tsp. cumin 1/2 tsp. black pepper 2 lbs. steak, sliced in to strips 2 peppers, any color, sliced 1 onion, sliced Tortillas Combine oil, lime, ranch dressing, cumin and pepper; pour over steak. Refrigerate overnight. Pan fry meat until cooked through to your preference with peppers and onion. To serve roll in tortillas. Refried Beans 1 bag (1 lb.) pinto beans Adobo seasoning olive oil Rinse beans in a colander and check to be sure there are no stones or other debris. Place beans in a large stock pot and cover with water so that the water is twice as deep as the beans. Heat to boiling and boil for 2 minutes. Turn heat off and cover, let sit for 1 hour. Drain beans in colander and rinse pot. Place beans in slow cooker and cover with water, making sure the water is twice as deep as the beans. Cook on Low for 8-10 hours. Drain beans, reserving liquid (place colander on a lg. pan or bowl then pour beans in). Mash beans, adding enough liquid to make beans mushy and soft. Heat 2 T. olive oil in a fry pan and add mashed beans and spices to taste. Stir until hot and bubbly. Budget Beef Stroganoff
I just had to try one last stroganoff recipe in the crockpot. I have to be honest, it tasted a lot like some of the other recipes we have tried. That being said I thought it was good. The sour cream really comes through. If your a fan of stroganoff I would recommend it. Recipe: 1 1/2 to 2 lbs round steak 1 tsp salt 1/8 tsp pepper 1 onion, sliced 1/4 tsp garlic powder 1 tbs worcestershire sauce 1 1/2 cups beef bouillon 1 tbs catsup 2 tbs dry white wine 1/4 lb fresh mushroom, sliced 1/3 cup flour 1 cup sour cream Cut steak into 1/4-inch strips. Coat with salt and pepper. Drop into bottom of slow-cooking pot with onion. Mix garlic salt, Worcestershire sauce, bouillon, and catsup. Pour over meat. Cover and cook on low for 6 to 8 hour or until tender. Turn control to high. Add wine and mushrooms. Dissolve flour in small amount of water. Add to meat mixture, stirring until blended. Cook on high for 15 minutes or until slightly thickened. Stir in sour cream; turn off heat. Serve with rice or noodles.
